Serves 12


6 pounds whole beef tenderloin
2 cups dry red wine
3 tablespoons Kentucky bourbon
1 teaspoon liquid smoke
1 1/2 cups olive oil
3 tablespoons Worcestershire sauce
1 cup chili sauce
1/4 cup onion grated
6 cloves garlic minced


1. Combine all ingredients except beef in a large glass or plastic container and mix well.


2. Trim beef of fat and add to marinade, cover and refrigerate for 24 hours, turning occasionally.


3. Remove tenderloin from marinade and place on top rack of a covered gas grill.


4. Close cover. Keeping heat low, turn meat occasionally and baste with remaining marinade.


5. Cook about 1 hour or until desired doneness is reached.


6. Let the cooked beef rest for about 10 minutes and cut into filets.


7. Discard marinade.


8. Serve with mushrooms sauteed in butter, or horseradish sauce.

you mean a tenderloin steak? 1 inch thich steak thing? Or a big long tenderloin? If it is the steak, I do a chili season rub and bbq for 10 - 12 min on the bbq and top with a chimichurri, argentina style pesto.

Tie the filets with butchers twine if they are misshaped. To cook the filets with a browned outside, tender inside, and with a pan sauce: Pat the steaks dry with paper towel, rub with oil, and season. Heat the oven to 450 with a baking sheet inside (to finish the meat). Heat a heavy pan or cast iron pan until very hot--high heat. Sear the meat, best at room temp., for about three minutes aside. Pop them into the oven, about 5 mins. And dont forget a short rest period for the meat. While the meat is in the oven prepare the sauce from the bits of flavor remaining in the pan.
