Mexican Chicken Casserole

Vegetable oil cooking spray
1 (10 3/4-ounce) can cream of chicken soup
1 (10 3/4-ounce) can cheddar cheese soup
1 (10 3/4-ounce) can cream of mushroom soup
1 (10-ounce) can tomatoes
1 small can green chilies
1 teaspoon cayenne pepper
1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
1 (11 1/2-ounce) package flour tortillas
2 cups shredded Cheddar
Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray.
In a large bowl, stir together the 3 kinds of soup, chilies, cayenne and the tomatoes. Stir in the chicken.
Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas. Sprinkle the cheese over the casserole and bake for 30 minutes.

This recipe serves about 6 people.
The following is what you will need to prepare this casserole:
Ingredients
1 Pound Ground Beef
1 Cup Chopped Onion
1 Cup Water
2 Cloves Garlic , Minced
½ Cup Taco Sauce
2 Ounces Sliced Black Olives
1 Package Taco Seasoning Mix
12 Medium Taco Shells Broken into pieces
9 Ounces Shredded Cheddar Cheese
The following is how you prepare the mixture:
Preheat oven to 375:
In a large skillet over medium heat combine the ground beef, onion and garlic.
Saute for 5 to 10 minutes or until beef is browned and onion is tender.
Drain excess fat and stir in the water, taco sauce, 1/4 cup olives and the taco seasoning.
Turn heat down to low and simmer for 4 or 5 minutes.
Layer half of the broken taco shells in the bottom of a lightly greased 8x12 baking dish. Cover with half the meat mixture and sprinkle with 1 cup cheese. Repeat using the remaining taco shells, the remaining meat mixture and the remaining cheese.
Bake at 375 for 25 minutes or until cheese is melted and bubbly.
I also top with a little chopped lettuce and chopped tomatoes and then a scoop of sour cream and remaining olives. I hope you enjoy any recipes you try, it's always fun adding your ingredients and making it your own

Creamy Taco Casserole
1 lb lean ground beef
1 package taco seasoning mix
1 cup water
1 medium onion, chopped
2 cloves garlic, finely chopped
4 ounces taco sauce
3 ounces cream cheese
8 ounces corn kernels
4 ounces sliced olives
1 bag Fritos corn chips, 10 ounce size
2 cups Mexican blend cheese, shredded
Toppings
tomatoes, diced
green onions, diced
sour cream
shredded lettuce
Brown the ground beef with the onions and garlic.
When all the pink is out of the meat add the seasoning mix, water, cream cheese, corn, 1/2 the olives and Taco sauce.
Let this simmer for 3 to 4 minutes.
Crush the Fritos chips (I used the chili flavored ones, but plain will work fine).
In an 8x12 casserole dish, layer 1/2 of the Fritos, then 1/2 the meat filling, and then 1/2 the cheese (regular cheddar will work also, I just prefer the combined cheese flavors).
Repeat the layers and top with the remaining olives.
Bake at 375° for 20-25 minutes, or until it is warmed completely and the cheese is melted.
To serve, you can top with shredded lettuce, the diced green onions (tops included), diced tomatoes and a shot of the sour cream.

CRUNCHY TACO CASSEROLE
1 c. chopped onion
1 lb. ground beef
1/4 c. chopped green pepper
1/2 tsp. seasoned salt
1 pkg. taco mix, dry
2 (8 oz.) cans tomato sauce
1 c. cheddar cheese
4 oz. cooked shell macaroni
Brown onion, beef, and green pepper. Add rest of ingredients. Pour into buttered casserole or roaster. Sprinkle with 1/2 cup grated cheese and crushed Doritos or chips. Bake covered for 20 minutes at 350 degrees and uncovered for 10 minutes. (You can crush more chips over it as you eat.)

Enchilada Casserole, Charlie Gibson’s
Casserole Ingredients:
1 large 13-ounce package Doritos (save 2 cups for casserole topping)
2 tbsp. onion, grated
1 10-ounce can chili with beans
10- to 15-ounce enchilada sauce
8-ounce can tomato sauce
1 and 1/2 cups shredded sharp cheddar cheese
Topping Ingredients:
2 cups Doritos
1/2 cup shredded cheddar cheese
1¼ cups sour cream
1. Preheat oven to 375° F.
2. Crumble 6 cups Doritos with your hands into a large mixing bowl.
3. Add the onion, the chili, the enchilada sauce, tomato sauce and 1½ cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8½ x 11-inch oven proof casserole dish.
4. Bake for 20 minutes.
5. Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.
6. Bake for another five minutes and serve.

Sugar Pie's Deep Dish Taco Squares
2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
½ green or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese
Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.
** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

Chicken Caliente Casserole
Butter, for greasing casserole
2 1/2 cups large-diced cooked chicken
3 cups cooked rice
1 cup sliced celery
1 cup sliced green bell pepper
1 cup sliced onion
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed
Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

Ingredients: hamburger, taco seasoning, salsa, finely shredded cheese, shredded lettuce, sour cream
Instructions: fry hamburger with taco seasoning then, evenly lay on bottom of casserole dish. spread sour cream on hamburger, then spoon salsa on top of sour cream, spread shredded lettuce on sour cream then top with cheese. (sometimes you can find Mexican seasoned shredded cheese, that is awesome for taco salad) Sometimes I like to add extra diced tomatoes if the salsa isn't really chunky.
