i am making some chicken that tells me to drizzle some melted butter. I don't have any right now and am in the middle of cooking it. i was going to try it without the butter, but is there a substitute that i can use?

You could make some herb oil. Just mix a little bit of dried thyme leaf with olive oil and a little bit of lemon juice.

I keep real butter around for some things - Christmas cookies and hollandaise sauce most recently. I also buy Smart Balance in the big size, using it as a trans-fat free shortning subsitute - pie crusts and other baking, and on bread. I like Smart Squeeze for topping veggies and pancakes. I used to make my own "lite" soft-spread butter, back in my Hippie days, beating together (with electric mixer) 1 cup softened butter, 1 cup light-flavored oil such as corn or canola, and 1 cup water. Pour into a tub, then refrigerate to firm up before using. **Edit** and Jolly Time buttery seasoning instead of salt and butter on my popcorn.

They're right. Cooking oil is about the only thing you can substitute butter with, without it tasting weird. Criso works too.

Nothing can take the place of butter in recipes and give it the same taste and texture. Do yourself a favor, cut the stove off and go to the store and buy some butter. You'll be glad you did.

Olive Oil? Ask your neighbor for a pat of butter?

I know this, margarine (because of its nature as hydrogenated oil) will not give the same results. Neither will soft butter spreads (added water).

just go with butter. Its easier and tastes better. trust me

no, not that make it great... if you use light butter, that is the only somewhat healthy/good tasting thing that you could use
