Keep in mind that out of the 30 people, not all will eat a regular size portion, most will sample or pass by it. You can prepare any one of these; Cole slaw, carrot salad, broccoli salad, potato salad, baked beans, green bean casserole, potato skins with sharp cheddar and chives, fried salmon cakes. There are plenty of things you can prepare without spending a fortune doing them. If time is your enemy as it is to so many of us, try your grocery stores deli or Wal Mart, they have delicious ready made deserts of carrot cake or a crab salad that is an excellent choice and is always loved. Don't let the holidays get you down, a lot of people use ready made foods for functions or their get together. Hope I've been of some help, have a merry Christmas.

This is one of my personal favorite and usually very popular at potlucks. It keeps well and in fact tastes best the next day if you don't put the cheese on until just before you serve it.
If you live near a Trader Joe's you can buy vacuum packed steamed lentils in the fresh vegetable section. If not, they are easy to do yourself by following the instructions below.
Also, this recipe makes quite a bit but for thirty people I would double the recipe.
Mediterranean Lentil Salad
2 Cups brown or green lentils washed
1 bunch Italian parsley, chopped fine
1 bunch fresh mint leaves finely chopped
3 green onions (white and green parts), finely chopped
2 Roma tomatoes peeled, seeded and diced small
Juice from two fresh lemons
3 Tablespoons fruity, extra-virgin, olive oil
2 teaspoons ground cumin
Salt and pepper to taste
1 Cup feta cheese crumbled
Put lentils in a pot, cover with water and cook on medium heat until nearly done about 10 or 15 minutes. Cover the pot, turn off heat and let sit for about 20 minutes. Drain off any excess water and cool completely. Combine lentils, parsley, mint, tomatoes and onion, lemon juice and 2 Tbs. oil. Heat 2 Tablespoons of olive oil in small saute pan; sprinkle in cumin and heat

Pigs in a Blanket
INGREDIENTS:
8 frankfurters
8 slices American processed cheese
1 (10 ounce) package refrigerated biscuit dough
DIRECTIONS:
Preheat oven to 350 degrees F. Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks. Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.
***Of course, you would increase your recipe. This would be your easiest recipe.

Two headed veal served cold on a shiny silver platter. Leave the head for decoration with all the cards I've saved and the pictures that I don't want anymore in one mouth and the restraining order that was full of her lies in the other mouth.
