If parmesan cheese is supposed to be refrigerated after it's opened, how do pizza places get away with leaving it out all day in shakers? Just curious.

Good Question. Mostly Parmesan doesn't need to be refrigerated. If you do it will help preserve it and help prevent mold. The pizza places are using a drier version of Parmesan so nothing will grow and they don't have to refrigerated. You can buy nonrefrigerated parm in the grocery store it's simply drier.

if its in a cool place it is pretty safe for a while
