I want to get it as early as possible because I don't want to go there and have them be out. So, How long can a Rib Roast stay good for in the fridge??

the best thing to do is order it ahead of time and let your butcher know when you want to pick it up. Also, tell him how many people you are wanting to serve and he will give you a good idea of how big of one you will need. I prefer a local butcher not one from a chain grocer.

If you want it early as possible you can dry age your rib roast but the problem is it would reduce the mass of the beast. unless you marinate it in sauces.

both ways can last forever if its cold like the lowest part of your fridge.

if you want to dry age your steak for maxnium tenderness.

2-3 days.
You could order it and pick up when you want which is what I do.
