In a cold sauce pan, pour 2 tablespoons of olive oil. Add finely minced three garlic cloves and 1 small onion diced. Turn the heat on med low, and watch carefully. You want the onion and garlic to get warm not fry. If the pan is sizzling, turn the heat down. You need some Oregano, thyme, basil and rosemary or some Italian Seasoning (no salt). Add 2 teaspoons of Italian seasoning or 1/2 each of the individual herbs. Stir and let it warm until the onions are translucent. Roughly chop the tomatoes and add to the pan. Stir in the paste and about half cup of wine. Simmer on medium for 10 minutes. Taste it and add salt and pepper to taste. At this time you can add a pinch of cayenne if you like it spicy but go easy because its sneaky and gets hotter over time. Taste again and simmer for another 30 minutes to let the acid in the tomatoes and wine cook down. I don't like sugar in my sauce but if you do, add a pinch and taste it again.

Hey, everybody forgot the sugar. Tomato paste is very tart, a little sugar will make it taste better, I promise.

Yes, just and some water until you get the consistence you want.
You'll want to use a whisk.
I add some italian seasoning in mine when using for pasta.
