Even the healthiest oil can contain a lot of calories so moderation is key. In general, use non-stick pans and a canola or olive oil cooking spray, which adds very little oil to a dish. The healthiest oil used to deep-fry will still be highly caloric, and in general give one more oil than is needed. Instead of deep-frying, stir-frying, grilling or baking are better methods for preparing food, since oil requirements in such dishes are much lower.

I concur with everyone else above. The key idea you need to keep in mind, be careful with the temperature and how long you cook the oil. Doesn't matter what oil you use. Trans fats are created with high temp and oxidation. The hotter and longer you cook the oil, the more trans fats are created. That's why some NYC restaurant owners were surprised with the health code violation, because even though the oil is trans fat free, they kept using the oil at very hot temperature and did not frequently change the oil either.

Callie nailed it for you. Extra, Extra virgin oil is the first pressing and the best quality and on down the line. (several qualities) I use them all the way up to doing a stir fry. But extreme heat does not work too good. Going to do some nasty frying, at a high temperature, just use your frying oils and enjoy. Just don't do it often. (Peanut oil is great for frying, but I don't like the flavor and some people are extremely allergic.

olive oil is always better to use. it's considered a healthy oil. but you have to know what to buy. always buy olive oil in a dark bottle, it has a much better flavor and is real olive oil. i cook my eggs in it and you don't need a lot of it. if you buy good olive oil. some things you have to use vegetable oil because you want an oil without flavor.

extra virgin is healthier, but not the best choice when cooking (heat) is involved. Regular olive oil the best for this.

(extra virgin cold pressed the best for cold foods.)

it is among them. But watch out Extra Virgin does not heat up well and it will brown and smoke a lot.

Yes. Canola being second. Although EVOO losses it's healthy components once it's cooked.
