It's possible that people eat it on Hanukkah, but definitely not because it's a traditional food for Hanukkah.
Gefilte fish is typically eaten every Sabbath, and has absolutely nothing to do with Hanukkah.
Traditional Hanukkah foods are foods fried in oil, due to the miracle of the oil for the Menorah lasting 8 days.
Some example are Donuts and Latkes (potato pancakes)

No, atleast not Sephardic Jews. We eat dairy foods with cheese, like Bimuelos and pizza and cheese cakes.
Usually the ashkenazi Jews eat foods made with oil, like latkes which are potatoe pancakes with apple sauce and other greasy foods.
