My grandma would bake hers and store them in airtight containers and put them in the refrigerator or she would store them out on the back porch. The porch was screened in and she didn't have alot of room in the freezer and since it was cold outside she would take advantage of it. You could also mix all your doughs up and then freeze them and make them a few days before Christmas. That way they will stay really fresh and keep you from eating all them before Christmas.

What kind of cookies?
I would form the cookie dough into balls and freeze them, before baking them.(They don't always turn out so great if you freeze them after baking.) Store the frozen dough in a container, like a freezer bag. Then when you need them, bake them up. You don't even need to worry about thawing the dough.

Place paper toweling in tins. Layer the cookies in and top with more towel. put the lid on and freeze!
Allow about 6 hours for cookies to defrost on cabinet.
I also use Ice Cream containers, the plastic ones, to stash cookies in for later.
I do a lot of baking in advance of events. I freeze most of the stuff til I am ready to serve it.

Whatever you do, don't freeze them. Because how would they thaw?
Anyway, store them in storage tight containers, layered with parchment paper. Hide them so they don't get eaten.
