This is the recipe I like to use:
2 pounds sifted powdered sugar
2 cups softened butter
2 cups solid vegetable shortening
2 tablespoons clear vanilla extract
1/4 teaspoon almond extract
optional: 2 tablespoons of meringue powder
Directions
Cream the butter and shortening until smooth. Add powdered sugar and vanilla. Beat until smooth. Do not over mix or beat on high speed.

butter cream is the best....doesn't need to constantly be refrigerated like Whipped cream....
Royal icing is nice for flowers and such, but it dries completely hard so you can't use it to ice the cake itself....also...if even a pinhead amount of "fat" (like butter or egg yolk) get in it it ruins the whole batch so you have to make sure your bowl, spatulas,decorating bags...and all the tips are COMPLETELY CLEAN.
I have not actually used fondant, but I heard it can be a little hard to work with because it will dry out if you leave it out too long.
I make cakes on the side...and one "tip" that keeps me from getting completely frustrated is the "crumb layer" of icing. Once the cake is ready to be iced, you ice it with a very thin layer of icing...not worrying at all about the crumbs that fall off the cake and end up in the icing.... then put it in the fridge for 15 min to set. this layer holds all the loose crumbs down so they don't show thru the regular icing layer. It has save a lot of things from being thrown across the room. :)

I took a crash course after buying a bakery on mothers day weekend!!! I only did 50 Mothers Day cakes that weekend then another 150 for graduation the following week!!!

buttercream, but make your own. It's easy.
INGREDIENTS:
1 cup butter, softened
6-7 cups powdered or confectioner's sugar
1/4 tsp. salt
6-9 Tbsp. milk
2 tsp. vanilla
PREPARATION:
In large bowl, cream butter until very fluffy. Add part of the sugar and salt and beat again. Continue adding sugar and milk in small batches, alternately, beating until very fluffy. Stir in vanilla. Fill and frost cake.

I love using buttercream and topping with a marshmallow fondant..(email if you'd like the super easy recipe) the fondant makes it look clean and nice...and you can form almost anything from the fondant!

royal icing works best for almost all occassions and it is very forgiving, easy to color,and pipe.
