If it was good American Lamb it will be tender no matter what you do to it.

Personally I would dice it up and make it into a lovely stir fry!

Me, I would slow cook it with tomatos, some garlic and cinnamon - then I would serve it over a bed of couscous with raisins/currents.

Quick, tender, tasty and easy.

is the leftover, uncooked lamb still safe to eat. if so, marinate it.
