Many credit French Benedictine monk Dom Pérignon with the invention of champagne (hence the name of the famous brand). But it was really an Italian Benedictine Monk, Francesco Scacchi (Fabriano, 1577-1656), who first wrote a recipe -- 46 years earlier, in 1622 -- for a sparkling wine that was obviously the progenitor of the later "champagne"; with his work being the precursor of the "champenoise method" for producing it.

Dom Pérignon, may, however, be credited with "perfecting" the wine, since he drafted rules for the cultivation, vinification, and skillful harmonization of different grapes (cuvée), which produced a better result than the white sparkling wine obtained with just a single type of grape.

Dom Perignon is the person you are thinking of, but he didn't invent champagne and he wasn't blind. But he was a Benedectine monk.

He did advance the champagne making process that already existed, and he did "blind taste tests" using grapes from vineyards besides his own (which started the "blind" rumors about him).

Dom Pérignon who was the cellar monk in 1700's France in the Reime area. You can now buy expensive champagne named after him at about $250.00 a bottle retail. He was not blind, he made all the wines for the monastery. He may have drunk himself blind after finding out his "mistake" was so delicious!
