1-What should i do unsweeten it?
2- can i use any kind of fruits to help doing the job?

not sure if you can unsweeten it...
if you added more fruit it wouldn't do much because the yeast should have already finished the fermenting process, and there shouldn't be anymore yeast left...so adding more fruit wouldn't help ya out....
hmmm, not sure what ya could do...i guess just botttle it and give it out as x-mas presents and next time don't add as much sugar or honey (whichever you used) when you make it...

Three possibilities:
1) Try to balance the sweetness with something tart (lemon or lime juice) ot tannin (tea is the easiest). Work on small samples to get the balance you want before treating the whole batch.
2) Blend it with a wine that is too tart.
3) Try to ferment the sweetness out. If you still have live yeast, it may be just a matter of raising the temperature a degree or two. If not, you might try adding champagne yeast. That seems to be more tolerant of high alcohol than most strains.

Is it still in the fermenter?

Adding some H20 will dilute the sugars some and the yeast can kick back into eating it up.

also look at the type of yeast you used. Some yeast have higher tolerances that others. Personally I like ec-1118. It will eats up lots of sugar, settles out nice, has low esters, and ferements rather quickly. So try adding stronger yeast as another possible remedy.
