Easy Chicken Cassorole
4 Chicken breast (cooked and shredded)
1 can cream of chicken+mushroom soup
1 small sour cream ( 8oz)
8oz shredded cheddar cheese
1 Sleeve of Ritz Crackers
2-3 tablespoons of melted butter
Poppy seeds to taste
Combine shredded chicken,soup,sour cream and cheese and place in casserole dish. Crush crackers and combine with melted butter and crumble on top of chicken mixture. Sprinkle to taste with poppy seed. Bake at 350 for 30 minutes. Hope you enjoy!

Excellent Chicken Quiche
Makes 8 servings
SOOOOOO easy
Ingredients:
12 oz fat free sour cream
4 eggs
12 oz chicken breast, cubes
1/2 tbs garlic
Directions:
Combine all ingredients.
Bake at 325 until eggs are set.
Cut into 8 pieces and serve.

I love southern fried chicken. Here is how I do it.
Southern-Fried Chicken
1 3 lb chicken, cut up
1/3 cup butter milk - Must.
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard - Gives the best flavor.
1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.
2. In a large deep cast iron frying pan, melt lard over medium-high heat to 375 degrees. I use the splatter test, put a little water on your fingers and flip it into the grease, when it splatters the heat is right. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels

My teens Favorite: Potato chip chicken
Chicken parts (any favorite will do)
1 Bag of non rippled chips, crushed
melted butter or margarine
favorite spices if desired, but not necessary.
Dip chicken pieces into melted butter/margarine and drop into bag of crushed chips, shake to coat, place on rack (over pan), bake at 350 for 1 hour.

you are going to think this is a joke but how about chicken and fried fruit? you take chicken coat it in bbq shake and bake place it in an electric skillet preferably but can be done on stove top on low heat add water to cover. let simmer for about half hour. then slice up an onion, apple, pear and a zucchini put it in the skillet add more water if needed let simmer for about 15 more minutes don't forget to turn your chicken serve with rice enjoy.

CHICKEN MARSALA RECIPE
Prep: 10 min; Cook: 10 min - Easy
Serves 4
This quick and easy chicken marsala recipe is also very tasty.
4 Boneless chicken breasts sliced in half
1 TBSP good olive oil
2 TBSP Butter
1/4 cup marsala or white wine
1 - 2 TBSP lemon juice
Salt
Freshly ground pepper (white or black) to taste
1 TBSP capers, rinsed, as garnish (or you can use chopped parsley)
RINSE chicken breasts under cold running water, drain, put on paper towel. Pat dry (they brown better when dry).
SLICE the chicken breasts to desired thickness.
SPRINKLE lightly with salt and pepper.
HEAT butter and olive oil in sautée pan over medium-high heat. Add chicken breasts. Sautée for about two minutes per side. REMOVE to a warm platter; you can place platter in warm oven.
ADD lemon and wine to pan; DEGLAZE (Dissolve the remaining bits of food) the pan using a wooden spoon or spatula to scrape. This is the basis for your sauce.
BRING to a simmer, reduce heat to medium-low.
RETURN chicken breasts to pan for 1/2 minute per side. Remove to warm serving platter.
POUR pan juices over chicken. Garnish with parsley. Serve.
VARIATION (just after deglazing):
Add 1/2 cup thinly sliced sauteed mushrooms.
WHEN SERVING:
1 TBS Parsley, finely chopped, as garnish.

Try this! Thin sliced chicken breast, dredge in seasoned flour (salt pepper, a dash or two of garlic powder)....shake off excess flour!!!!
Saute in a little EVOO and a dab of butter( medium heat) add a squeeze of lemon juice, a little capers, when you flip the chicken, add a splash of white wine cook until wine is reduced (doesn't take long...min or two)...... total cook time is about 6 to 8 mins...It's quick and easy......hope .you'll enjoy it!

take some chicken parts, ie: drum sticks, thighs, breasts, or whole legs, etc.. and rub with mayonnaise, then sprinkle with a cajun spice mix, or mexican chile powder mix.. put on a grill pan, or any baking pan and put in oven on bake 375F.. and bake for 35 min (till you cut into one and the juices run clear) the mayonnaise makes the skin nice and crunchy along with the flavor of the spice.. you can serve this with anything.. fries, baked potatoes, salad, noodles, mashed potatoes, mixed steamed veggies.. etc..
