It would be hard to pick just one mixed martial artist as the most famous in the world. Here are a handful of the most famous (not necessarily title holders or even currently fighting):
Royce Gracie, Ken Shamrock, Dan Severn, Randy Couture, Fedor Emelianenko, Tito Ortiz, Chuck Liddell, Quinton Jackson, Dan Henderson, Wanderlei Silva, Mirko "Cro Cop" Filipovic, Cung Le.
A secondary fame index would place the TUF winners from each season, Pride, Wec, and King of Pancrase champions, as famous but to a lesser extent than the marquee names above.
Of course, there have to be some I missed and I look forward to others pointing out my omissions (I'm sure I'll be saying "How could I have forgotten so-and-so", etc).

Jackie Chan, Jet Li, or Bruce Lee are very famous.. They script martial arts in movies for obvious reasons, but are masters in multiple styles. They have also developed martial arts of their own to combine the best of several martial arts and leverage their abilities and develop schools to teach inner city kids self discipline and develop self worth. Chuck Norris and Steven Segal were also famous in the U.S., but are out of the the circuit and focused on specific martial arts.

I thought I saw an article a few weeks back in Parade that indicated that Bruce Lee had lost out to Chuck Norris with Jackie Chan being a distant second and they attributed this to the changing generations and how long it had been since Bruce Lee's death in 1973. Another factor was "Walker, Texas Ranger" had been in syndication now for several years in something like a hundred and fifty-nine countries.

Bruce Lee, Jet Li and Jackie Chan do/did(Buce) not practice mixed martial arts. Kung Fu is a regular martial arts.

Answer is easy, Fedor Emelianenko. Randy Coutre might be bigger in america because of the UFC (and he's Brett Farve's hero) but world-wide Fedor is known as the best MMA fighter in the world.

With his new-found popularity combined with actual championships, I must give Chuck Norris all of the credit here. He is showing up on ads for a major automobile company as well as a presidential candidate.
As far as modern MMA is concerned, I must go with Rampage. He has gained worldwide exposure through Pride and shocked the US with his KO of Liddell. Chuck was far and wide the most recognized figure in the US, but lacked the world exposure.
Fedor deserves a mention here, but average American Joe's don't even know who he is despite his accomplishments.
Speaking of the average Joe, Ken Shamrock seems to be very popular and recognizable as well and nobody has forgotten Hoyce Gracie's accomplishments.
