Im leaving for 7 months of Army training... my husband has never been the "cook" at our house, and so I taught him some basics, like spagetti, but I was wondering if anyone had some good recipes that are SIMPLE with not too many ingredients required... I dont want my kids living off of hot dogs and PB&J for 7 months... :) Thanks!!!!

Here are a few that are good & easy! I have made all of theses. Hope this helps & enjoy!!

Slow cooker Chili

INGREDIENTS
1 pound ground beef
1 onion, chopped
2 green bell peppers, chopped
2 (15 ounce) cans kidney beans with liquid
2 cans(15oz) black beans
1 can(15 oz) black eyed peas
1 (28 ounce) can whole peeled tomatoes, with liquid
1/4 teaspoon chili powder


DIRECTIONS
In a large skillet over medium high heat, saute the ground beef for 5 to 10 minutes, or until browned. Transfer to a slow cooker. Then add the onion, green bell peppers, beans and tomatoes to the slow cooker. Season with chili powder to taste. Cook on high setting for 5 hours, or until all vegetables are tender.



Slow Cooker Beef Strorganoff

INGREDIENTS
1 pound cubed beef stew meat
1 (10.75 ounce) can condensed golden mushroom soup
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 cup water
4 ounces cream cheese



DIRECTIONS
In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.



Slow Cooker London Broil

INGREDIENTS
2 pounds flank steak
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed tomato soup
1 (1 ounce) package dry onion soup mix



DIRECTIONS
Place meat in the bottom of the slow cooker; if necessary, slice meat to make it fit!
In a medium bowl, mix together mushroom and tomato soup. Pour mixture over beef. Sprinkle dry onion soup mix over top.
Cover, and cook on Low for 8 to 10 hours.



Slow Cooker Chicken & Rice Soup

INGREDIENTS
1/2 cup chopped celery
1 pound boneless chicken breast halves, cooked and diced
3 (14.5 ounce) cans chicken broth
1/2 cup water
2 cups frozen mixed vegetables
3/4 cup converted long-grain white rice
1 tablespoon dried parsley
2 teaspoons lemon and herb seasoning


DIRECTIONS
Combine celery, chicken pieces, chicken broth, water, mixed vegetables, rice, parsley and herb seasoning in a slow cooker. Cover, and cook on low 6 to 8 hours. If soup is too thick, add more water to dilute and allow 15 minutes of additional cooking time.



Slow Cooker Chicken with Stuffing

INGREDIENTS
4 (4 ounce) boneless, skinless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 1/4 cups water
1/4 cup butter or margarine, melted
1 (6 ounce) package corn bread stuffing mix


DIRECTIONS
Place chicken in a greased slow cooker. Top with soup. In a bowl, combine the water, butter and stuffing mix; spoon over the chicken. Cover and cook on low for 5 hours.


Creamy Chicken Stew


INGREDIENTS
1 cup lowfat evaporated milk
1/4 cup all-purpose flour
1 1/2 pounds chicken leg meat
3/4 pound small fresh button mushrooms
2 potatoes, peeled and cubed
2 cups pearl onions
2 large carrots, coarsely chopped
2 1/4 cups frozen green peas, thawed
1 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried marjoram
1/4 teaspoon dried rosemary
1/4 cup chopped fresh parsley


DIRECTIONS
In a small bowl stir together evaporated milk and flour until smooth. Place chicken, mushrooms, potatoes, onions, carrots and peas in slow cooker. Pour in milk mixture and broth. Season with salt, pepper, marjoram and rosemary. Cook on low 6 hours. Stir in parsley just before serving.


Chicken Casserole


INGREDIENTS
4 skinless, boneless chicken breasts
1 (8 ounce) can water chestnuts
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 cup cornflakes cereal crumbs
1 cup mayonnaise



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large pot, boil the chicken until tender. Cut the breasts into cubes or small pieces.
In a large bowl, combine the chicken pieces with the water chestnuts, onion, soup, most of the crushed corn flakes and mayonnaise. Mix well.
Pour mixture into a 9x13 inch baking dish. Sprinkle the rest of the crushed corn flakes on top of the mixture. Bake in the preheated oven for 1 hour.


Chicken Broccoli Casserole


INGREDIENTS
4 skinless, boneless chicken breast halves
1 pound broccoli florets, cooked
1 (10.75 ounce) can condensed cream of mushroom soup
1 tablespoon mayonnaise
1 cup shredded Cheddar cheese
1 cup dry stuffing mix



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
In a small bowl mix together the soup and mayonnaise. Set aside. In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30 minutes



Brown Rice & Black Bean Casserole

INGREDIENTS
1/3 cup brown rice
1 cup vegetable broth
1 tablespoon olive oil
1/3 cup diced onion
1 medium zucchini, thinly sliced
2 cooked skinless boneless chicken breast halves, chopped
1/2 cup sliced mushrooms
1/2 teaspoon cumin
salt to taste
ground cayenne pepper to taste
1 (15 ounce) can black beans, drained
1 (4 ounce) can diced green chile peppers, drained
1/3 cup shredded carrots
2 cups shredded Swiss cheese



DIRECTIONS
Mix the rice and vegetable broth in a pot, and bring to a boil. Reduce heat to low, cover, and simmer 45 minutes, or until rice is tender.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Mix in the zucchini, chicken, and mushrooms. Season with cumin, salt, and ground cayenne pepper. Cook and stir until zucchini is lightly browned and chicken is heated through.
In large bowl, mix the cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, carrots, and 1/2 the Swiss cheese. Transfer to the prepared casserole dish, and sprinkle with remaining cheese.
Cover casserole loosely with foil, and bake 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.



Kings Casserole---Yummy!!!!


INGREDIENTS
4 skinless, boneless chicken breast halves
1 tablespoon chicken bouillon
1 cup chicken broth
1 cup chopped onion
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup diced red bell pepper
1 (14.5 ounce) can diced tomatoes with green chile peppers
2 (8 ounce) cans chili beans, drained
12 (8 inch) flour tortillas
3 cups shredded Colby-Monterey Jack cheese



DIRECTIONS
Bring a large saucepan of lightly salted water to a boil. Add chicken and bouillon and boil for 12 to 15 minutes, or until cooked through (no longer pink inside). Reserve 1 cup broth. Remove chicken from pan and dice; set aside.
In a separate large saucepan combine reserved broth, onion, cream of chicken soup, cream of mushroom soup, bell pepper, diced tomatoes with green chile peppers and beans. Mix together and heat through, stirring often.
Preheat oven to 350 degrees F (175 degrees C).
In a 9x13 inch baking dish layer casserole as follows: 4 torn tortillas, 1/2 of diced chicken, 1/3 of soup mixture, more tortilla strips, remaining diced chicken, 1/3 of soup mixture, more tortilla strips and remaining soup mixture. Cover with cheese.
Bake in preheated oven for about 20 to 25 minutes, or until heated through and cheese is melted and bubbly.


Shepherds Pie


INGREDIENTS
5 potatoes, peeled and quartered
1 pound lean ground beef
1 (4 ounce) can sliced mushrooms
1 (15 ounce) can mixed vegetables
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of celery soup
salt and pepper to taste
3 tablespoons butter


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter.
Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly.


Ham, Potato Broccoli Casserole

INGREDIENTS
1 (16 ounce) package frozen French fries
1 (16 ounce) package frozen chopped broccoli
1 1/2 cups cooked, cubed ham
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can milk
1/4 cup mayonnaise
1 cup grated Parmesan cheese


DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
Bake uncovered in preheated oven for 40 minutes.



Meatloaf with Ranch seasoning

INGREDIENTS
1 1/2 pounds ground beef
2 eggs, beaten
1/4 cup ketchup
3/4 cup herb-seasoned dry bread stuffing mix
1/2 (1 ounce) package dry Ranch-style dressing mix
1 (6 ounce) can French-fried onions


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
Shape into loaf and fit into 9 x 5 inch loaf pan.
Bake, covered loosely with foil, at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until meat is thoroughly cooked.



Meatloaf

INGREDIENTS
1 1/2 pounds ground beef
1/2 pound ground breakfast sausage
1 cup Italian seasoned bread crumbs
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (10.75 ounce) can condensed cream of mushroom soup
1 egg



DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine the ground beef, sausage, bread crumbs, onion, mushrooms, soup and egg. Mix together well and place in a 5x9 inch loaf pan.
Bake at 375 degrees F (190 degrees C) for 50 minutes.

Tuna Noodle Casserole

2 cans tuna in water
1 can cream of mushroom
1 small onion chopped
1 block Velveeta ( there's 3 sizes tell him to get the medium)
1 lb Noodles - (Sea Shells work best cuz they catch the goo)
salt / pepper
(optional) 1/3 sleeve of saltines


Boil noodles according to package
Melt the Velveeta for about 1 minute in microwave to soften
Mix all ingredients with the cooked noodles and top with crumbled saltines in oven-safe dish
Bake at 350 for approximately 45 minutes.

This is really easy and is awesome (a wierd side with this believe it or not is a little cold apple sauce on the side, it surprisingly goes well with the warm creaminess of the casserole)



Also, I don't know how old your children are and if there taste buds are equipped for a little spicier dishes but a box of Jambalaya mix (zatterans or other) with a thing of smoked sausage like Hillshire farms or Oscar Meyer added to it takes about 30 minutes and doesn't taste like it came out of a box.

There is a great cook book called "A man, a can, and a plan" that involves basic recipes for things like baked chicken and some other things, it is VERY simple and funny.
My hubby likes to do pulled pork in the crock pot - put a pork roast in with some onions and a little (1/2 cup) broth or water, cook on low all day, then shred and add barbecue sauce of your choice. He also does scrambled eggs a LOT. Pasta with pesto is another popular choice at our house, as are mashed potatoes, and homemade mac and cheese. Also, for some reason, many guys love to grill slabs o meat.... (this is what my sister's hubby does when she is deployed). hope all goes well for you.

There are a couple cookbooks out there like, "A Man, A Can, and a Plan" with really easy recipes in them.

Anything is good in a crock pot--do you have one of those? You really can't go wrong! :)

We make enchiladas all the time--can of chicken, can of enchilada sauce, can of beans, can of rice, some corn, some cheese--they are so delicious. Just mix the chicken, half of the sauce, half of the beans and rice, as much corn and cheese as you want, and then put that mixture into soft taco shells. Then roll 'em up and put the rest of the sauce and some cheese on top. 15 minutes at 375 or 400 (just till they're warm) and voila! :)

I have a fussy 5 year old boy and the thing that I did was to get a kids cook book, sit down with him and plan a meal together, maybe a main meal and a pudding. Get him to go with you shopping and let him help you make it. That way he will see food can be fun. Or if you can't do that try making the food into pictures on the plate. ie mash potatoes for a face, a sauage for a mouth, a half a tomato for a nose, a boiled egg cut into two for the eyes and baked beans for hair. There's always the trusted Hamburger, Tuna, and Chicken Helpers. Fast and easy and not too bad. Roast is pretty simple. Turn the flame as low as it will go and cover with water and cook for an hour (give or take). Just make sure it doesn't burn out all the water. Of course, canned vegi's and Mac & Cheese & Stove Top. Chilli. Goulash. Fish Sticks and frozen fries. Frozen Pizza's. Then there's always McDonalds. haha

Chicken and Veggie Rice
2 skinless boneless chicken breasts
1 pkg Rice a Roni Pilaf flavor (any flavor will do fine)
2 cps frozen mixed veggies

Trim chicken of all fat and cut into chunks. Coat a frying pan with cooking spray and brown the chicken. Remove from pan and set aside.

Prepare rice and start simmer as called for on the Rice a Roni package. After 10 min, add the frozen veggies and the cooked chicken. Cover and simmer till the rice is done.

Chicken Pot Pie
2 skinless boneless chicken breasts
1 tsp Schilling Montreal Chicken seasoning
1/2 cp frozen corn
1/2 can green beans
1/2 cp frozen sliced carrots
1/2 cp frozen peas OR 2 cps of any frozen veggies you prefer
1 jar Heinz Chicken Gravy

1 ¾ cp Bisquick
1 egg
2/3 cp milk

Preheat the oven to 375*

Spray a skillet with cooking spray. Cut the chicken into chunks and cook in the skillet. Sprinkle with the Montreal Chicken seasoning. In a med bowl stir together the corn, green beans, carrots, peas and gravy. Add the cooked chicken chunks, set aside.

In another bowl mix the Bisquick with the egg and milk. Stirring just till blended.

Spray a baking dish with cooking spray. (It can also be cooked in 4 smaller single serving dishes, 10-12 oz size) Spoon the chicken gravy mixture into the prepared pan. See below for directions on spooning the Bisquick mixture over the filling.

IMPORTANT DO NOT try to put the top crust it in the middle and spread it out. It will be too thick in the middle to cook through. You must put spoonfuls around the edges, maybe an inch or so apart and then a spoonful or two in the middle. Spread it out as evenly as possible. Bake 25 min or until the crust is golden brown.

Stuffing Meatballs
1 box Stove Top Stuffing, cornbread
2 lb hamburger
2 egg
2 Tbls Worchestershire sauce
1 can cream of mushroom soup
1 cp milk

In a large bowl mix the hamburger, dried stuffing, stuffing seasoning packet, eggs and 1 Tbls W sauce. Spray a skillet with cooking spray. Form the meat mixture into meatballs about 2” in diameter and brown them.

In a small bowl mix the soup, 1 Tbls W sauce and milk until well blended. Pour this over the meatballs. Cover and simmer 20-25 minutes or until the meatballs are cooked through.

Easy Beef Stroganoff
1 lb hamburger
1 sm onion, chopped
1 can sliced mushrooms
1 12oz jar Heinz fat-free beef gravy
½ tsp garlic powder
½ tsp pepper
1 8oz container fat-free sour cream
8 oz egg noodles, cooked

Brown and drain the hamburger. Add onion and fry another 3-5 min or until onion is opaque. Add the gravy, mushrooms, garlic powder and pepper and stir together. Cover and simmer 10 minutes.

While that cooks prepare noodles. When they’re ready stir the sour cream into the stroganoff and serve over the noodles. This is also very good over baked potatoes.

My own recipe: 1 lb hamburger 1 small minced onion , hand full of oatmeal, 1 egg, salt, pepper...mix it up make meatballs and bake in a 350 degree oven for about 20 min..take out of oven and put into a sauce pan...pour a jar of ragu cheese sauce over it and simmer to heat...serve with veges and potatoes ( instant is ok) I call them cheesy meatballs and my kids love them. I sneak the oatmeal in for extra nutrition. My 4 year old grand daughter likes to help make the meatballs so maybe they all could pitch in and learn how to cook too!. Be safe and take care yourself.

OK, this is what my husband fed his kids when he just got out of the military and his former wife was still in. His kids loved it.

2 cans of tuna, drained
2 cans cream of mushroom soup
3/4 - 1 soup can of milk
1/3 pound Velveeta, cubed
Canned or frozen peas (as much as kids can tolerate)

Mix the tuna, soup, milk, and Velveeta until melted and smooth and heated. Add peas and heat up. Spoon it over toast.

He called it his own little soldiers S.O.S. He told them it meant Slop On Shingles. Heh. I was wary of it when he first made it for me, and now I crave it. When I make it, I add a little garlic powder and some sauteed mushrooms.

One of my husbands and kids favorites.
They call it stroganouf
1 pkg egg noodles cooked
1 lb hamburger browned
2 cans mushroom soup
2 cans tomato soup
1 can mushrooms (if you like them)
sour cream (if you like)
Drain noodles
mix hamburger and soup and mushrooms together and heat through
mix everything together and top with sour cream (he likes tobasco sauce too)

easy biscuits
mix self rising flour with whipping cream to make a dough and roll it out cut biscuits and put on baking sheet bake at 375 till lightly brown. These are another favorite at my house.
Dinner is Done!

Hormel, Armour, Tyson and other brands have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Most all come with gravy. They are very good and I serve them often. Use this for your meat dish and add vegetables, rice, or potatoes and gravy. You will find these packages near the meat section, they are not frozen.

Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
