Salmon, Rice & Fried Tomatos
INGREDIENTS
1 cup uncooked long grain white rice
2 cups water
1 1/2 tablespoons lemon pepper, divided
1 tablespoon dried dill weed, divided
2 tablespoons vegetable oil, divided
1 pound salmon
1 tomato, sliced 1/2 inch thick
2 eggs, beaten
1 cup all-purpose flour
DIRECTIONS
Bring the rice and water to a boil in a pot. Season with 1 tablespoon lemon pepper and 1/2 tablespoon dill weed. Reduce heat to low, cover, and simmer 20 minutes.
Heat 1 tablespoon oil in a skillet over medium heat. Place salmon in the skillet, and cook 20 minutes, turning once, until lightly browned and easily flaked with a fork. Set aside.
Season the tomato slices with remaining lemon pepper and dill. Place the eggs and flour in 2 separate dishes. Dip each tomato slice in the egg to coat, then press in the flour, coating both sides.
Heat remaining oil in the skillet over medium-high heat. Place tomato slices in the skillet, and cook 5 minutes on each side, until lightly browned. Serve salmon over the cooked rice, and top with fried tomatoes.
Herbed Salmon
INGREDIENTS
2 pounds salmon
5 dried sage leaves
1 tablespoon dried thyme
1 pinch ground paprika
1 pinch ground cayenne pepper
2 TBS ground Garlic
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spray one side of a sheet of aluminum foil large enough to fold over all the salmon with cooking spray.
Arrange salmon on the prepared side of the foil. Sprinkle with sage, garlic, thyme, paprika, and pepper. Fold foil over salmon to enclose.
Bake salmon 20 minutes in the preheated oven, or until easily flaked with a fork.
Baked Salmon
INGREDIENTS
1 pound salmon fillet, halved
1 small tomato, chopped
5 green onions, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 Tbs ground Garlic
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place salmon on a lightly oiled sheet pan or in a shallow baking dish, folding under thin outer edges of fillets for even cooking. Top salmon with chopped tomatoes and green onions, garlic, and season with salt and pepper.
Cook salmon in the preheated oven, uncovered, for approximately 20 minutes. Fish is done when easily flaked with a fork.
Orange Salmon---Yummy!!!!
INGREDIENTS
2 blood oranges, peeled and sliced into rounds
1 pound salmon fillets
1/2 teaspoon freshly grated nutmeg
1 cup red wine
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Arrange orange slices in a single layer in the bottom of a medium baking dish. Place salmon on oranges, and sprinkle with nutmeg. Pour red wine over the salmon.
Cover, and bake 20 to 25 minutes in the preheated oven, until easily flaked with a fork.

Blackened Salmon
What you need:
salmon fillets, margerine or softened butter, Zatarain's (or brand of your choice) Blackened Seasoning, a good skillet (preferably cast iron)
What you do:
Get your pan heating. It is ready when you can flick water onto it and the droplets bounce. If they only sizzle up to vapor turn the heat down. If they just bubble, it is still too cool.
While it is heating, rub the butter on one side of the fillets and shake the seasoning over it. Don't be stingy with it. Once the pan is hot enough, place the fillet seasoned side down in the hot dry pan. It's going to start hissing and sputtering and smoking, and you are not to move it an inch. Trust me. Look at your watch, and don't move it until four or five minutes have passed.
While you are waiting, rub butter on the unseasoned side (don't burn yourself though!) and sprinkle the seasoning on. If three to five minutes have, the fish that was sticking to the bottom earlier will have released and you can flip it with your spatula. Flip it, admire the crisp professional looking crust, and wait three to four minutes before transferring to a plate.
Excellent when drizzled with a thin cream sauce, this recipe is very fast, easy, and impressive. Not to mention tasty. Just make sure the vent over your stove is in good condition, or else you might want to take the battery out of the smoke detecter first. Hey, good food sometimes has a price.

Barbecue-Roasted Salmon
Ingredients:
1 cooking spray
1/4 cup orange juice
2 tbsp fresh lemon juice
2 tbsp light brown sugar
4 teaspoons chili powder
2 teaspoons grated lemon zest
1 teaspoon ground cumin
1/2 teaspoon salt
12 ounce salmon fillets
Directions:
Preheat oven to 400 degrees. coat shallow baking dish with cooking spray.
In a small bowl, whisk together first 9 ingredients. Add fillets to the prepared pan. Pour orange juice mixture over the salmon and turn to coat both sides. roast for 15 minutes, until a fork can be easily inserted into the salmon.

My favorite way is very simple. Broil it with a little lime juice (or lemon if you prefer) and some fresh ground pepper. Soooo good! It only takes about 5 minutes or so on each side - or about 8 minutes if you use something like a George Forman grill. It might take more or less time depending on how thick the salmon is. It will flake easily when it's done.

This is super easy and tastes wonderful
BAKED SALMON FILLETS
2 tbsp. lemon juice
1/4 c. packed brown sugar
4 Market Day salmon fillets
1 tbsp. butter, melted
4 thin slices lemon
8 tsp. brown sugar
Heat oven to 375 degrees. Pour lemon juice into ungreased rectangular baking dish, 11" x 7 1/2" x 2"; sprinkle with 1/4 cup brown sugar. Arrange fillets in dish; drizzle with butter. Bake uncovered 15 minutes; turn. Place 1 slice lemon on each salmon fillet; sprinkle with 2 teaspoons brown sugar. Bake until fish flakes easily with fork, 15 to 20 minutes longer. Serve with juices from dish.

I prefer salmon grilled. Heat the grill to med heat. Spray the grill with a cooking spray, also spray the skin on the salmon fillet. Lay the fillet on the grill and sprinkle with Cajun seasoning, lots if you like spicey or just a little if you don't. Lemon pepper is another option for seasoning if you don't like Cajun.
Close the lid on the grill and cook for roughly 10 min. It depends on the thickness of your fillet how long you need to grill it. You can tell it's done when you stick a fork in the thickest part, twist it and the flesh flakes easily. Use a spatula to lift the flesh away from the skin and put it on your serving plate.

Put the salmon fillets in an oiled baking dish and spoon some pesto on top. Bake at 400 degrees for about 10- 20 min depending on the size of the fillets.

3 salmon steaks (about 1/2 lb each)
lemon juice
Ritz crackers, crumbled
garlic and onion powder
3 pats butter (1 tablespoon each)
salt and pepper, to taste
1 tablespoon fresh parsley, minced
Spray a shallow sided aluminum baking pan with olive oil spray. Place fish steaks on pan, each with a pat of butter on top. Sprinkle evenly with garlic and onion powder and a pinch each of salt and pepper. Crumble the crackers evenly your hands) over the top of the fish (using your hands). Sprinkle with minced parsley.
Broil (on the top rack), without turning, until the edges of the fish are browned and the flesh is a whitish pink (no longer clear) and it starts to look flaky when touched with a fork. This will take about 10-15 minutes, depending on your oven and the size of the fish steak.
Squeeze lemon juice over top before serving garnished with a sprig of fresh parsley and lemon wedges.

Take 1 c. Sour Cream, 2-3 TBS. Dill and combine. Spread over the filet and bake at 350 til firm and flaky. Serve with Angel Hair pasta with Garlic butter and chives. Serve with a nice white wine.
