I haven´t been able to find anything about it online, I´m probably searching wrong.

The cornea (front surface of the eye) is very smooth and reflects light just like a mirror. You can also see your reflection in other smooth surfaces like still water, glass or polished wood.

My guess would be because the surface of an eye is damp, and you can usually see reflections in pools of water, especially when they are smooth, so...there's my answer :)

Your cornea's are like jelly & your eyes have a tear layer to keep it lubricated - generally wet stuff reflects.
