We have made these yummy treats every Christmas eve for years and year! And always leave one for Santa too!

Irish Cream Fudge

What You Need:
Large bowl
2 packages ( each package should be 12 ounces each) of milk chocolate chips
1 (12 ounces) package semisweet chocolate chips
2 jars of marshmallow cream, 7 ounces EACH
2 teaspoons of vanilla extract
2/3 cups of Irish Cream
2 cups of chopped nuts - optional
4 1/2 cups of granulated sugar
1 12 ounce can of evaporated milk
1/2 pound of butter
What You Do:
In a very large bowl, combine the 2 packages of milk chocolate chips, the one package of semisweet chocolate chips, both jars of marshmallow cream, 2 teaspoons of vanilla extract, the Irish Cream, and nuts if you are adding them. Set this mixture aside.
Line a 10-x-15-inch pan with foil and spread lightly with butter or margarine.
In a medium sized saucepan, combine 4 1/2 cups of granulated sugar, 1 can of evaporated milk, and 1/2 pound of butter. Bring to a gentle boil over medium heat and cook slowly, stirring constantly for about 10 minutes.
Pour the milk mixture into the very large bowl holding the chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand and NOT use any kind of mixer.
Pour the fudge into the prepared pan and chill until set.

A) Oatmeal cookies under the cover of an Quaker Oat Meal box lid... and double the raisins.
B) Sliced bananas with a tablespoon of real mayonnaise smeared on top for each banana. Serve about 1/2 a banana per guest as a side dish.
C) Breaded tomatoes (another side dish that complements mashed potatoes, green beans, etc... complements salty food)
1 can Chopped or diced tomatoes with juice
3 or 4 slices of Bread
3 tablespoons Sugar
1 dash of salt
Bring tomatoes to a light boil. Add sugar, salt and stir. Reduce heat to low. Start tearing pieces of bread and adding to the mixture while stirring. Keep adding bread until all the juice is absorbed. The bread should be well absorbed completely by the juice and should be mushy with a slight amount of tomato juice run-off when placed on a plate. Don't be tempted to add anything else such as garlic or onions... this is a semi sweet dish to complement salty flavors.
D) Snack Tray
Brie Cheese sliced into double bite-size
Seedless Grapes
Sliced apples
Ritz Crackers
Wheat Thins
Summer Sausage (Hillshire Farms is good) sliced into bite size
1 lb Lit'l Smokies in your favorite BBQ sauce, plus one tablespoon of liquid smoke, brought to a slow boil.
All served with a lot of toothpicks.
E) Best and Unusual Salad Dressing
[A 14 year old can do this recipe just fine. You can get everything at the grocery store. You can substitute vegetable oil for peanut oil. You will find gingerroot in the produce section by onions or oriental vegetables... they have a thin brown skin and looks like an old lady's bony fingers all twisted up. When you chop it, it is weird and a little like bamboo (but doesn't look that way) and stringy. You get the rice vinegar by the salad dressing... sometimes it is called rice wine vinegar and in a smaller skinny bottle.]
1 cup chopped onion
1 cup peanut oil
1/2 cup rice vinegar (must be rice vinegar; Nakano is good)
1/4 cup water
1/4 cup chopped fresh gingerroot (remove the skin first, if you don't know)
1/4 cup chopped celery
4 tablespoon soy sauce
2 tablespoons tomato paste
2 tablespoons sugar
1 1/2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon pepper
Be sure to chop the gingerroot fine, then mix it in a blender at highest speed for a long time... maybe a minute or more. It's best after it sits over night. Always shake it
well as it separates. This has a great taste and is best over just lettuce... no, carrots, cabbage, or tomatoes... just plain lettuce. It has a little reddish yellow look, and while it separates, it still taste great.

In our home we always had( have) homemade potato salad and wieners or hot dogs.We now use nitrite free ones from the healthfoodstore.The recipe for the german potato salad I use now is following:
5lb potatoes(1/2 white, 1/2 russel or red)
marinade in bowl:-11/4 tblsp salt
-less than 1 tsp pepper
-2 tblsp sugar
-11/2 c pickels liquid
-3/4c hot water
put everything in: -1/2c white destilled vinegar
-2 bunch green onions
-2 white or 1 white and 1red
onion
add to potatoes
finally add 1/2c oil( not olive oil)

Avocado black bean dip
5 avocados diced
1/2 cup lime juice
put avocados in lime juice immediatley after dicing to keep them from turning brown
1 red onion diced
1 can black beans drained
1 can corn drained
1/2 cup cilantro chopped
1/4 cup jarred jalepenos drained and chopped
mix all ingredients and chill for at least 2 hours before serving
stir well before stirring adding more lime juice as needed
serve with tortilla chips!!!
