You can try using a candy thermometer... but there are thermometers out there that are for hot oils and clip to the pan.
edit: ok, here you go, $20... bet you can find one cheaper at like target though... but you want to make sure it will clip to the side of the ban so you don't accidently burn yourself.

We have cookouts all the time and we have a clip on thermometer. We keep it clipped on the side of our pot and for heating grease for frying the opportune temp is 350 degrees. Everything turns out perfect. You can probably find these thermometers at Walmart, Target or some hardware store. Just depends on the amount you want to pay for it. Hope this helps!

A thermometer. Use a good cooking thermometer that can handle the temperature range you are looking for. For most frying, that is between 200 and 300 degrees.

Yes, a food thermometer.
Be VERY CAREFUL heating oil. At low temps, oil isn't very combustible. However, as the temp rises, it becomes very combustible. It can also boil over and give you serious burns, because, unlike boiing water which will roll of your skin, boiling oil is "sticky" and will burn you when it touches your skin and continue to burn you while it is stuck to your skin.
