If you stop and think people love desserts. They will talk more about a dessert to others than a main course. Every time I take this cake to a gathering I never have any left to bring home.
Holy Cow Cake
1 Box Chocolate Cake mix
1 Container of Cool Whip
1 Jar of Carmel Sauce
1 cup Heath Bits
Bake cake according to package directions. While the cake is still hot, poke holes in cake with a fork. Pour carmel sauce over cake. Cool for about 30 minutes. Spread Cool Whip over cake when cake is compelety cool. Sprinkle crushed candy bars on top. I use the Heath Bits beacuse their already crushed. Holy Cow its good!!

This might sound like an odd recipe but it is very tasty and will have people talking.
In a crock pot, combine equal parts Heinz chili sauce and grape jelly. Let cook until jelly is melted and mixed well. Add small cooked meatballs to it and let cook until sauce gets thicker and meatballs are hot all the way thru. If you do not like a little spice in your food you can use ketchup instead of chili sauce. My mom makes this all the time and people love it!

This is very good, you can adjust the amount for the size of group.
CORNED BEEF CASSEROLE
1 (7 oz.) shell macaroni
2 cans chicken soup
2 c. milk
1 can corned beef
2 sm. onion
1 1/2 c. Velveeta cheese
Mix all ingredients. Let stand overnight. When ready to bake, cover with potato chips (optional). Bake 1 1/2 hours at 350 degrees. Use large casserole dish.

Sausage Dip you can make this a couple of hours in advance and even brown the sausage a day in advance and put it in the fridge.
2 lbs cooked sausage drained
2 8 oz packages cream cheese
1 can rotel tomatoes(I like the hot for this)
1 TB poppy seeds
put every thing in a crockpot for an hour or so and serve with tortilla chips or garlic bagel chips(my favorite) it's always a hit.

Avocado black bean dip
5 avocados diced
1/2 cup lime juice
put avocados in lime juice immediatley after dicing to keep them from turning brown
1 red onion diced
1 can black beans drained
1 can corn drained
1/2 cup cilantro chopped
1/4 cup jarred jalepenos drained and chopped
mix all ingredients and chill for at least 2 hours before serving
stir well before stirring adding more lime juice as needed
serve with tortilla chips!!!

CREAMY PASTA PRIMAVERA
12 ounces pasta, bowtie noodles
2 yellow squash, thinly sliced
10 ounces asparagus spears, cut in 2" pieces
8 ounces baby carrots, cut lengthwise, half
2 tablespoons all-purpose flour
2 cups skim milk
1/4 cup sour cream, light
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
2 ounces feta cheese, crumbled
Add pasta to a large pot of boiling water and cook 10 minutes. Add squash, asparagus and carrots and cook 8 minutes or until pasta and vegetables are tender. Drain and place in a large serving bowl.
Meanwhile put flour in a large skillet. Slowly whisk in milk until blended, taking care to get into corners of skillet. Bring to a boil over medium-high heat, stirring often. Reduce heat to low and simmer 3 to 4 minutes, stirring constantly, until sauce thickens slightly. Remove from heat, whisk in sour cream, mustard, lemon juice, salt and pepper.
Pour over pasta mixture and stir to mix and coat. Sprinkle with cheese.

Chicken Tostadas
2C cooked chopped chicken (I like breast meat)
3 cans veg-all drained
2C chopped lettuce
Best Foods Mayo
seasonings: season salt, garlic powder, pepper
chopped onion optional
mix it all up
serve it on tostada shells - buy them in the mexican food isle- they are better than the regular ones
put bottled chile on top- my fave is valencia
this sounds weird, but it is awesome, try it out!!

i think that salads are always a big hit at pot lucks. there are so many salads to choose from. you could do a garden salad, or if you want to put a little more time in it try a pasta salad or chicken oriental salad, they are really yummy!
