Laying the door flat is the best way to stain and finish it. The ends should be coated to prevent warping. The bottom edge can not be sealed while the door is on the hinges.

That's a really tough question!
Having the door on saw horses is handy for sure! But you can only do one side at a time, and then have to flip the door to do the other side, putting your fresh stain job on the sawhorses.
On the other hand if you hang the door and cover the floor for drips and spills, you can do both sides of the door while the hinges hold the door up for you.
So here we are right back where we started! What would 'you' prefer? laying on sawhorses, or hanging up on hinges?

Before, hard to stain it once it is up, be careful when you hand it though, so no to scratch.
