8 weeks minimum. The last week makes a HUGE difference. This is the time when they are learning everything they need to know from the mom. Any earlier could result in behavior problems.

Here is some advice: the holidays are very stressful it isn't a good time to bring a puppy into the home. Wait until the holiday is over to bring a puppy home.
What you can do is take a picture of the puppy and put it in a card and give it to your kids. Write a little note saying in just a few weeks this puppy will be all ours!!
A puppy should be at least 8-10 weeks old, no younger they need to learn things from their litter mates and mother.

Wait until after christmas to actually bring the puppy home. With the holidays being so hectic, it will be hard to give the puppy the attention that it needs as well as do any good in starting to train him.
Pick out your puppy before christmas and give the kids a picture as well as a book on puppy care (age appropriate) then go get the puppy after christmas when it is old enough.

I know that common recomendation is 8 weeks but it also varies a great deal by breed. The giant breeds as a rule mature more slowly so I don't let my wolfhound pups go until they are around 12 weeks. Toy breeds do fine at 8 weeks and shepherd & retrievers would likely be better at 10 weeks. When you look at 8 week old pups of different breeds the difference in the maturity levels is obvious.
Also I agree with the idea of giving a picture instead of the actual pup, maybe with a cute bed, crate and all the other needed supplies.

If the dog is a "tiny" breed, it should not leave it's mother until 11-12 weeks. Larger breed dogs can leave between 9-10 weeks.
7 weeks is too early for any puppy.

6 weeks is when they are weaned but you want to wait til about 12 weeks as they still have things they need to learn from the mother. I would instead wrap things like some chew toys, leash and collar, treats, crate, things like that and let it be a surprise when they open these then show them a pic. If they are old enough to read or you could read to them books about dog care so they can be a little more prepared.Congrats on the new puppy just make sure they are up to date with their shots and health care.

It is the law in most states that a pup or kitten must be 8 weeks old before it can be sold or giving away it is to rough on them before 8 weeks of age
