My husband makes amazing fresh salsa using all fresh (not canned) ingredients. He does not cook the salsa like most recipes say to do, he simply buys the ingredients and chops them up and adds a little vinegar, lime, etc. I am sending a care package to my cousin who is stationed in Iraq for Christmas and we want to send him some salsa because it is his favorite!! It takes about 10-13 days to get there from here and I want to make sure it isn't spoiled when it gets there. We were just going to chop it up and put it in jars and send it. Do you think this will work, since it is in jars? Any ideas would be greatly appreciated!!! Thank you!!

When jarring salsa, add:
1 Tbsp. lemon juice per pint (can use more if you like for increased acid and tartness)
½ tsp. salt per pint

***

Bring tomatoes to a boil, then cook down for approximately 1 hour until reduced by about ½.

Add remaining ingredients (except lemon juice & salt). Bring to a good, steady simmer and cook for 10 minutes.
Ladle salsa into hot, sterilized pint jars, adding lemon juice and salt. Adjust two-piece lids, and process in a boiling
water bath canner for 15 minutes.

After you make the salsa heat it until it starts to boil and put it in glass jars and seal them. They will cool fast enough to keep the flavor.
Please thank your cousin for defending my freedom and tell him lots of us here appreciate what he is doing for us. I hope that when he is done in the military he can have several decades to enjoy the freedom he helped protect for us all.

It should work. We keep some things in Mason Jars longer than that. The only other thing that might help is to wrap it in brown paper to keep out sun.
