It has been gray, cold and snowy all day. I always crave foods that are salty, greasy and filling on days like this! I am hoping to lose a little weight, though, so what can I eat that will satisfy my Mexican craving but not "break the bank" as far as calories go? Any Taco Bell secrets (I know, not real Mexican) or healthy but tasty quesadilla or nacho recipes?

yikes not a real good thing to eat on a low cal diet....
if you make your own tacos, you can go with the corn hard taco shell , or you can do a wheat soft shell

ground beef browned, drained buy 1 of those taco season packets
shredded cheddar
diced tomato
diced onion
you can do diced avocado, lo cal sour cream and jarred salsa!!!
sounds great!!!
angelas idea sounds good but i was thinking of keep things down pricewise!

Chicken Verde Enchiladas

Makes 4 servings

Ingredients:

1 cup chopped onion
1 1/2 cups shredded cooked chicken breast
4 oz reduced-fat Cheddar, shredded
1 cup salsa verde
3 oz. fat-free cream cheese
1 tsp. ground cumin or chili powder
8 corn tortillas, 6"

Directions:

Preheat oven to 350*F.

Place a large nonstick skillet coated with cooking spray over medium heat until hot. Add onion, and sautee 6 minutes or until tender.

Add chicken, 1/2 cup Cheddar cheese, picante sauce, cream cheese, and cumin. Cook 3 minutes or until cheese melts.

Spoon about 1/3 cup chicken mixture down center of each tortilla, and roll up.

Place enchiladas in a 13x9-inch baking dish; drizzle with taco sauce, and sprinkle with 1/2 cup Cheddar cheese.

Cover and bake at 350*F for 15 minutes or until cheese melts. Serve enchiladas immediately.

Chicken soft taco, fresco style from Taco Bell. It comes with salsa instead of the cheese. I don't remember the calorie count but it is 4 Weight Watcher points.

Try making chicken fajitas.
Use your favorite dry fajita seasoning or I make my own. Add chicken and lime juice and let marinate for fifteen minutes then add some sliced pablano peppers and onions. Grill it all. We use a little stove top grill but you can use a frying pan as long as you drain off any excess fat/liquid. Then just add a little fresh salsa (jarred is also ok, but not as good for you) and cheese and wrap in a low carb tortilla! We also use this same chicken and pepper filling for quesadillas.

Fajita seasoning
Onion powder, garlic powder, salt, pepper and chili powder.
