I live in the north and love oxtails. They are really beef; I liken them to short ribs, at bit, not too many oxens around now-in-days. I season them, with seasoning salt, pepper, garlic, and a pk of Lipton Beefy Onion Soup Mix, water to cover, and cook them in a crockpot overnight. The meat will fall off the bone. I carefully take them out and then pour the juice in a sauce pan to make a gravy, add pearl onions and mushrooms (for my dad) ...... or I add cream of mushroom soup. I have it with rice or pinto beans. My aunt cooks the pinto beans in the crockpot with the oxtails, but I have not done this as of yet. Jamaicans make oxtails a lot, with hotter spices and curry. I don't know that recipe.
