I'm making a pinhole camera where a regular digital camera takes a pic of the reflected image. Will it work?

Yes. I saw a link earlier today, but don't have it handy. What they did was make a black box with a tiny pinhole in front then a white wall on the back (inside of course). They had a bigger hold on the front just big enough for the camera's lense to fit through. It must not allow light through this hole. For a clear picture, you'll need an exposure time of 30 seconds minimum, depending on the size of the pinhole. Not all digital cameras can take pictures this long.

Good luck. The only way I can see it working is if you form the image on a ground glass and take a very long exposure from behind the glass.
