I make salsa all the time with can tomatoes and my family is begging me to make some as christmas gifts but I need to know if I should follow a canning process with just my ingredients....not using vinegar and extra salt.

Good question:

If you are going to be giving gifts LOCALLY, salsa that is made at home usually is good under refrigeration for about 2 weeks WITHOUT A CANNING PROCESS.......if you're planning on shipping or storing the salsa for an extended time, then yes, you're going to have to go through the canning process......you can go to the USDA's website (USDA.gov) and see how they recommend canning acetic mixtures, which is what your salsa falls into that category....Enjoy!!

Yeah, unless it'll stay refrigerated. Canned tomatoes will still go bad once they've been exposed to air.

you need some equipment to "Quot" can..!!!...
The high acid content of the tomatoes
MAY only require a boiling water bath..
a meat base... pressure cooking ???
