What hapens if you overbeat eggs when baking? I beat eggs seperately and then added them to the butter sugar mixture, beating even more, A little too much. ( I am making muffins)

Overbeating the eggs not a big issue overbeating the whole concoction well there you'll have a problem you will have added more air into the batter and could end up having holes in the muffins or they will be tough. Really it just's make the eggs fluffy now if it was just egg whites you would have meringue overtime.

If you over beat JUST THE WHITES then the protines get all clingie and they start to coagulate and will eventually squeeze out all the water and become dry fluff in a puddle of liquid.

If you over beat the whites AND the yolks together they don't really change that much because the fat in the yolks keep the protine from overly coagulating.

The proteins in the eggs wont set if its overbeat.

nothing much it just get a bit more runny then usual dont worry im sure the muffins will come out fine

Maybe egg whites if you over beat them, but not so much eggs.

it just gets really fluffy

if you only beat the whites for long enough you will get merangue
