DIRECTIONS
In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
Preheat oven to 375 degrees F (190 degrees C).
To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

Lasagna in it's traditonal way is a layered pasta dish.
Using a meat sauce, cottage cheese, chopped spinach, ricotta, mozzarella and of course the noodles.
Usually using a lasagna pan or large casserole dish square start with a layer of meat sc, then some noodles more meat sc, some ricotta, cottage cheese, spinach, mozza, more noodles depending on the depth of you dish it should be about 4-6 layers. Remember the first layer just a bit of meat sauce to keep the noodles from sticking to the pan top layer lots of mozza cook for 45 minutes to one hour also freezes well frozen around 2-2.5hrs. at 350 degrees. Best to cover with some plastic wrap then foil the plastic wrap keeps the foil from falling into the lasagna the tomato juice's will eat away at the foil.
The last few minutes take the foil off and plastic wrap and allow the lasagna to brown slightly take out and allow to rest for atleast 5 minutes unless you like to scald your mouth with boiling cheese. Enjoy.

There are a million different ways to make Lasagna. I make a cheese vegetarian type. I cook down home grown tomatoes and add tomato paste and sauce. I add herbs and spice and let it simmer a couple of hours until it reduces. I saute' mushrooms, onions, green peppers, garlic in olive and add them to the sauce. I always boil the noodles ( some people don't). Finally the cheese which are very important. I mix a container of ricotta and cottage cheese together and add some Parmesan. I assemble the layors with noodles in a pre-sprayed casserole dish first, I add the sauce and then the ricotta mixture, if I am using fresh spinach I layer it next with a layor of either mozarella cheese and/or jack. If you are adding meat to the mix add it into the tomato mixture. Repeat and cover with cheese on top and bake until cheese on top is bubble and brownish.
