i soaked some red kidney beans over night and then cooked them for a good 2 hours or a hour and a half. My mother told me that if i dont cook them right i could get a upset stomach.

My question is, why do you have to soak them over night and make sure you cook them soft? Are they dangerous?

They give you gas is the only downfall I can find. We have to soak them to rehydrate them, they have been dried to last longer. Same as dried potatoes, carrots, onions, garlic etc. They all have to rehydrated . I suppose you could eat them dried,

I don't think they will hurt you but they will give you gas. You soak the beans to soften up the skins and that reduces the cooking time. Unless you are using a pressure cooker which works very fast anyway. There is something in the skin that causes gas in some people and after you soak them you need to rinse them really well. Sometimes there are little bits of impurities...stones etc that are mixed in with the beans. Actually I am getting this backwards, sorry, rinse them before you soak them and then really well after too. That will help reduce the gas effect. This is advise for all beans not just red ones.

The only dangerous thing about beans is the gas you can get from them. Thats what soaking them overnight is for. You should dump the water the next day and boil in fresh water.

The only other way they could be dangerous is if you loaded them in a slingshot.

they have poison in the peels, same as almonds peels
ventilate when you cook them and trow away the cooking water.HCN cyanide wil kil at 150mg but that needs a lot of kidney beans

Its to make it cookable, if you dont soak them and then boil them, its take longer to be cooked. and if you undercook them its poison, so your mother is right.

Nope, no danger...unless you consider the un-lady-like behavior of farting to be dangerous...that is about all that will happen. :-)
