What does the 5 stars on the China flag represent? Also what about the flower on the Hong Kong flag?

If the 5 stars stand for communism, will they eventually change there flag sometime soon because they will change government types? Or will China always be a communist country?

Since when is China changing government? There are no opposition parties and the Communists have no plans to step down any time soon.

Well first of,China's flag does not have any stars and is not communist, you must be confusing it with the People's Republic of China which like you said is in fact communist and does have stars on it's flag. Now,

The red background symbolizes the blood shed throughout the revolution. The yellow color mainly symbolizes the Chinese people as "Yellow People" and was partly inherited from the previous flag color of Soviet Union which was also a combination of red and yellow, in which case the yellow symbolizes the brightness of the communist future.

The larger star symbolizes the leadership of the Communist Party of China and the four smaller stars that surrounds the big star symbolize the four classes of Chinese that were considered unitable by Mao at that historical time (from one of Mao's work: On The People's Democratic Dictatorship); these are the Workers, Peasants, Petty Bourgeoisie (i.e. Small Business Class), and National Bourgeoisie (i.e. Chinese non-governmental businessmen). It should be noted that the view of the bourgeoisie classes was changed in the political movements afterwards. Readers should be aware that there are alternative interpretations, such as five stars representing the five biggest ethnic groups or the four stars representing the classes not exactly like the four mentioned above. Unfortunately, these interpretations have no historical basis. The one important point to note here is that the bigger star represents the Chinese Communist Party which is claimed as the leader of all.

Edit : as for the Hong kong, flag, well,
The design of the flag carries cultural, political and regional meanings. The color itself is significant; red is a festive color for the Chinese people, used to convey a sense of celebration and nationalism. Moreover, the red color is identical to that used in the national PRC flag chosen to signify the link re-established between post-colonial Hong Kong and China. The juxtaposition of red and white on the flag symbolizes the one country two systems political principle applied to the region. The stylized rendering of the Bauhinia blakeana flower, a flower discovered in Hong Kong, is meant to serve as a harmonizing symbol for this dichotomy

The 5 stars stand for communism. As for HK, it means HKSAR, the special administrative region.
