We're having a potluck lunch at my office for our Secret Santa gift exchange next week. What side dish or salad should I offer to bring?

I always bring this to potlucks and it is the first thing prople go for!


Cheesy Hash Brown Casserole

1 (32-ounce) package frozen hash brown potatoes, thawed
1 pound American process cheese, cubed
1 (10 3/4-ounce) can condensed cream of celery soup, undiluted
2 cups (16-ounces) sour cream
3/4 cup butter, melted and divided
3 tablespoons chopped onion
1/4 teaspoon paprika
2 cups corn flakes, crushed
In a large bowl, combine hash browns, cheese, soup sour cream, 1/2 cup butter and onion. Spread into a greased 13 x 9 x 2-inch baking dish.Sprinkle with paprika.
Combine corn flakes and remaining butter; sprinkle on top of casserole. Bake, uncovered, at 350*F (175*C) for 50 to 60 minutes or until browned and heated through.
Serves 8 to 10.

broccoli salad. i admit-it doesn't sound good but it is
delicious.
8 slices bacon (I cheat and use a bag of already done crumbs)
2 heads fresh broccoli chopped
1 1/2 c sharp cheddar cheese
1/2 large red onion, chopped
1/4 c red whine vinegar
1/8 c white sugar
2 t black pepper
1 t salt
2/3 c mayo
1t lemon juice
Fry bacon and crumble.In large bowl combine broccoli, onion,cheese and bacon. Prepare the dressing in a small bowl by whisking together the wine,sugar,pepper,salt, mayo,lemon juice. Combine w/salad and refrigerate till ready to serve. Some times we add seedless green grapes too.

I'd bring something healthy, as most things like that are all junkfood, and people really appreciate some healthy foods at this time of year. How about a fresh fruit salad?

Avocado black bean dip
5 avocados diced
1/2 cup lime juice
put avocados in lime juice immediatley after dicing to keep them from turning brown
1 red onion diced
1 can black beans drained
1 can corn drained
1/2 cup cilantro chopped
1/4 cup jarred jalepenos drained and chopped

mix all ingredients and chill for at least 2 hours before serving
stir well before stirring adding more lime juice as needed
serve with tortilla chips!!!

If you are going to bring a salad
baby spinach

dressing
pack of fresh basil
2 cups cup of veg oil
1 cup of sugar
1 cup of apple cider vinegar
1/2 tablespoon of salt and half of peper
3 garlic cloves

Blend on high for 15 min, let cool for an hour and serve with baby spinach, garganzola cheese and dried cranberries

If you take salad, I would take a colorful salad with iceberg lettuce, romaine lettuce or spinach, and tomatoes. Then also tak 2 - 3 different salad dressings.

For a side, green beans with bacon onion and salt & pepper, broccoli & rice casserole, corn, mashed potatoes...the list could go on and on!

Make a dessert. One that I always make that is always a big hit is bread pudding, Emril has one on foodtv.com that I use. I do not use raisen but subsitute chocolate chipsfor them. also, I drizzle carmel ontop. It is ohh so yummy. Your co-workers will love you. If you want, since this takes no time at all you could bring a jello mold which is also easy and depending on the recipe it could go over very well

A really easy salad to bring wold be baby spinach, Mandarin oranges, almond slivers and oil & vinger dressing (or a vinagrette) - it's simple and you can throw it together in a minute.
