I know Veritas Lux Mea, means Truth is my light. I don't know how to properly conjugate shield or even if I'm using the proper verb... I know Tego can mean roof, to conceal, even to lie as in to hide the truth... but it can also mean to shield or to protect. Thank you for your help.

Veritas scutum meum (est)

Tego has the meaning you said but it's a verb while shield is a noun and the Latin correspondent must be conjugated at the accusative. I suggest you to use scutum (a neuter noun, same as at the nominative and accusative) that has both meaning of shield and defence,protection.
Being scutum a neuter noun the adjective meus(my) changes into meum (neuter sing.accusative)
