Give him a sincere commitment to assist him in the faith. Whatever need he should have over the course of the next year, let him know that he can count on you to come through for him. And then be true to your word. He could ask for nothing better than that.

well, why don't you ask him. Priest are just like everyday people. maybe he likes football, or classical music. I'm sure he's probley got a ton of stuff over the years that are religious in nature, he might just want something ordanairy. Gift certificates always work.

Donation to an endowment fund in his name (either to the church or to his alma mater; contact the Chancery to find out how)
Anything related to his hobby -- fishing tackle if he's a fisherman, golf balls if he golfs, guitar strings if he plays guitar, etc.
Call his secretary to find out if he needs anything new for his office, like curtains, a desk chair, a file cabinet, a coffee maker, a hands-free headset for his telephone, or something like that.
Our confessionals are always sweltering in the summer, so I always thought I'd like to give our priest one of those personal air conditioners to wear around his neck when he's in the confessional, but I can't afford it.

Could be so many things....

A generic one is a gift card, for example, to Barnes and Noble.

Could also be a shirt or an Abercrombie cologne (my favorite is Fierce), etc....

Hmmmm. A nice sweater to keep him warm? Find out if he enjoys a wee bit of "the fruit of the barley", and a nice bottle of single malt Scotch whisky...that might also keep him warm on a chilly night.
