Turkey is surrounded by seas which contain a large variety of fish. Fish are grilled, fried or cooked slowly by the buğulama method. Buğulama is fish with lemon and parsley, covered while cooking so that it will be cooked with steam. The term pilâki is also used for fish cooked with various vegetables, including onion in the oven. In the Black Sea region, fish are usually fried with thick corn flour. Fish are also eaten cold; as smoked (isleme) or dried (çiroz), canned, salted or pickled (lâkerda). Fish is also cooked in salt or in dough in Turkey.Pazıda Levrek is a seafood speciality which consists of sea bass cooked in chard leaves. In fish restaurants, it is possible to find fancy fish varieties like balık dolma (stuffed fish) or balık iskender (inspired by Iskender kebab). Fish soup prepared with vegetables, onion and flour is common in coastal towns and cities. In Istanbul's Eminönü and other coastal districts, grilled fish served in bread with tomatoes, herbs and onion is a popular fast food. In the inner parts of Turkey, trout alabalık is common as it is the main type of freshwater fish.
Popular sea fishes in Turkey include: anchovy hamsi, sardine sardalya, bonito palamut, gilt-head bream çupra or çipura, red mullet barbun(ya), sea bass levrek, whiting mezgit (allied to the cod fish) or bakalyaro, swordfish kılıç, turbot kalkan, red pandora mercan, tırança, and white grouper lagos.[7]

SERVINGS : 4
INGREDIENTS
1 kg anchovies
1 coffee cup olive oil
1/2 glass water
1 lemon, sliced
1 bunch dill, chopped
1 bunch parsley, chopped
1 teaspoon salt
PROCESSING METHOD
- Clean the fish and wash them. Place anchovies side by side in a flat pan.
- Add the olive oil, water, lemon slices and salt. Cover and cook on medium heat for 6-7 minutes.
- Let cool before serving. Garnish with chopped dill and parsley.

Apply a thin layer of olive oil and salt and grill them on barbecue or in oven.
Or fry in a little oil, if they are not fatty.
As a new Turk, you should know that we don't like our fish messed with too much.
Then make a fresh vegetable salad with olive oil and lemon, open a bottle of rakı or wine. Enjoy!

i like fish but i dont like to pick bones all the time . so it should be removed from bones before cooking so i dont have to mess with the bones or very thin bones like hamsi..

marinated salmon (marinated in garlic 'n lemon juice for at least 4 hours) is my all time fave fish dish
