I would consider all of these cars future collectibles, meaning they will at least HOLD their value (not necessarily go up) if kept with low miles and in mint condition:

Very likely:
All Corvettes, especially significant years and models, i.e. first and last years of body styles and ZO6s.
Pontiac Firebird Firehawk (limited release, tuner model from '93-01. A 93 in mint condition is probably already worth a fortune as only 25 were made)
All Mustang Cobras, especially the Shelby GT 500

Probably:
Although somewhat old already, First generation Dodge Viper, and first and last year of each body style change
2001 Subaru WRX, 2003 WRX Sti
2003 Lancer Evolution, Lancer Evo MR models
First and last model year of each body style Mustang GT
Last year of Trans Am and Camaro SS
Upcoming new Dodge Challenger and Chevy Camaro (both first year only)
Upcoming GT-R (first year only)
First year Lotus Elise (don't remember the year)

Long Shots (might not hold 100% of their value, but still be desirable):
Mazdaspeed Miata
Mazdaspeed3
Civic Si
All first generation WRXs
2002 New Beetle Turbo S
Ford SVT Focus

This is almost imposable to answer.
(and many that are considered "classics" now are nothing but old junk)

A "classic" to me is a car that was rare at the time of production. What this means is:
1) original purchase price far in excess of the normal.
2) low production run
3) pride and craftsmanship taken in original manufacture

Using these 3 things you can't help but buy a "classic", or a future classic.

Oh, and a Chrysler 300 is a "steaming pile".
