I want to make my own yeast, so I can eventually make vinegar.

How do I grow yeast?
How do I harvest it for vinegar?

There are some yeasts that can be found naturally in the air. You can find some on the surfaces of fruits - like the whitish residue on the skin of a plum. In the old pioneer days women made bread from these natural yeasts. Sorry, I don't have any recipes and I don't know if it'll help you make vinegar.

vinegar bacteria makes vinegar, not yeast.

Yeast is a natural organism, you don't make it. You buy some and grow it in a culture so it multiplies.
