You need to wake up earlier, and go to sleep earlier. You may also be anemic (iron, B-12) and have no energy to do it.

Use a crockpot. YOu can put on a pound of dry beans or peas while you're gone for the day, and come home to a hot supper, and have leftovers for lunch the next day.

You can cook a pot of rice adn eat on it for 2-3 days, microwaving it to heat it up.

Eat yogurt sprinkled with granola and a hard boiled egg for breakfast- no cheating. Keep hard boiled eggs in the fridge and even if you get the drinkable type of yogurt, eat this everyday.
Eat a salad and fruit for lunch- some type of beans in the salad and a grain--I like rice salad with black beans, corn, salsa, mayo and cilantro. OR premake falafal patties (from the box mix) and keep in the fridge in a plastic container with paper towels in between, and pack with pita, hummos, and salsa.
For dinner, something high in protein, try a tofu based entree or omelette.

Enjoy!

start picking up tofu and making quick tofu scrambles in the morning. it takes like, 5 minutes tops. For lunch, a faux turkey sandwich is quick and easy, and for supper, try making a stir fry with egg noodles and assorted peppers and other brightly coloured vegetables.
