i need to do fermentation for my biology lab. how do i ferment yogurt into the tasty goodness it is. if i ferment it rite. can i eat it? help please

Yes, it's edible. Use a plain yogurt with live active cultures.
Here's a website that's pretty good. That I've used successfully.

Yoghurt making is EASY.
- Buy a container of PLAIN yoghurt at a store (you need a starter culture). Make sure it says it contains LIVE, ACTIVE bacteria.
NOTE: doesn't matter if it is regular, low-fat or non-fat

- Buy milk (cow's, goat or even soy)
NOTE: fat content doesn't matter here either. You're fermenting the milk sugar, not the fat.

MAKING YOGHURT
- Leave the yoghurt out so that it comes to room temp.
- Pour 2 cups milk into a re-sealable jar.

I like to heat the milk in the microwave for 4 minutes and stir to kill off any other bacteria or organisms that may be present. This is not necessary if you're pouring milk from a sealed container - just warm for 30 sec.
NOTE: If you heat the milk, make sure that it is not too hot (dip your pinky finger in to test - should feel warm to very warm but not hot) or you will kill your culture.

- Add 2 T yoghurt to the milk and stir or shake to disperse bacteria
NOTE: Preferably, use non-metal spoon to measure, stir and seal your container.

- Cover and leave in a warm place over night (at least 8 hrs.; leave for 24 hours for BEST results)

TRY IT - YOU'LL LIKE IT!!!!!
Homemade yoghurt has an amazingly clean, fresh taste and doesn't need sweetening.

ADDED - RECIPE

MANGO LASSE (Indian smoothie)
2 c yoghurt
1 c fruit (fresh or canned mango or other fruit)
2 T sugar or other sweetener (may add more to taste)

Blenderize and enjoy!
