It's something on my mind for a while. Warm milk also smells different too.

Yes! The flavors have a slightly different aqueous activity, vapor pressure, and solubility at different temperatures.

One of the main components of milk is the protein. Protein at a certain temperature denatures and then recombines in a different way. It probably has something to do with that.

(Another example of protein denaturing is when the eggs get cooked and they "harden".. first they denature and then they bind together again in a mesh that make the whole thing hard like a fried egg. The egg white denatures and binds before the yellow because it doesn't need as high of a temperature)
Milk proteins will change at a certain temperature too

someone should try to make some warm milk and then chill it again and do another taste test.. do they still taste different when warm milk was chilled?

Being a former chef, it is like any food or drink that is warm or heated, the complexitys are heighten and you get the full flavour, that is why red wine is served at room temp, cheese is best that way to.

And there are certain foods that have more flavour warm or at room temparture than cold or hot, desserts and anything with a strong flavour like spices, chocolate or highly seasoned, try putting a bag of chips in the freezer, eat a few and se the different in the taste, you will be surprise, that is why milk is different, it has all its flavours and complex sences elevated when warmed.
