We do a all appetizer meal on Christmas Eve and I am looking for some new recipes! Any suggestions would be appreciated.

Here are a few that I have made, they are all good!! Enjoy!!


Baked Cream Cheese Crescents

INGREDIENTS
1/2 (8 ounce) package refrigerated crescent rolls
1 (8 ounce) package cream cheese
1/2 teaspoon dried dill weed
1 egg yolk, beaten



DIRECTIONS
Unroll dough on a lightly floured surface; press together seams to form a 12 x 4 inch rectangle. Sprinkle one side of the cream cheese with half of the dill weed. Place brick of cream cheese dill side down in center of dough. Sprinkle dill on top of cream cheese. Enclose cream cheese by bringing sides of dough together and pressing edges to seal. Place dough on lightly greased cookie sheet. Brush with beaten egg.
Bake at 350 degrees F (175 degrees C) for 15 to 18 minutes. Serve warm.


Baked Walnuts

INGREDIENTS
2 egg whites, stiffly beaten
1 cup white sugar
1/2 cup butter, softened
1 pound walnut halves



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
To the stiff egg whites add sugar, butter and walnuts. Mix until nuts are well coated. Spread out on a cookie sheet.
Bake in preheated oven for 20 to 30 minutes, stirring a couple of times, until browned



Christmas Meatballs----Yummy!!!!

INGREDIENTS
2 eggs
1 envelope onion soup mix
1/2 cup seasoned bread crumbs
1/4 cup chopped dried cranberries
2 tablespoons minced fresh parsley
1 1/2 pounds lean ground beef
SAUCE:
1 (16 ounce) can whole berry cranberry sauce
3/4 cup ketchup
1/2 cup beef broth
3 tablespoons brown sugar
3 tablespoons finely chopped onion
2 teaspoons cider vinegar


DIRECTIONS
In a bowl, combine eggs, soup mix, bread crumbs, cranberries and parsley. Crumble beef over mixture and mix well. Shape into 1-in. balls; place 12 to 14 balls on a microwave-safe plate. Cover with waxed paper; microwave on high for 3-4 minutes or until no longer pink. Remove to paper towels to drain. Repeat with remaining meatballs.
In a 2-qt. microwave-safe dish, combine sauce ingredients. Cover and microwave on high for 3-4 minutes or until heated through.




Cucumber & Ham Rolls

INGREDIENTS
1 medium cucumber
1 (8 ounce) package cream cheese, softened
2 tablespoons prepared mustard
1 teaspoon dill weed
8 thin, rectangular slices deli ham


DIRECTIONS
Peel cucumber; cut in half lengthwise. Scoop out seeds with a spoon. Cut each half lengthwise into four strips; set aside. In a small mixing bowl, combine the cream cheese, mustard and dill. Spread about 2 tablespoons over each ham slice. Place a cucumber strip on the wide end; roll up tightly jelly-roll style. Cut off any cucumber that extends beyond ham slice. Wrap tightly in plastic wrap and refrigerate for at least 2 hours. Cut into 3/4-in. slices.


Chicken Bites

INGREDIENTS
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
2 tablespoons butter or margarine
1 (11 ounce) can mandarin oranges, drained
2/3 cup orange marmalade
1/2 teaspoon dried tarragon


DIRECTIONS
In a large resealable plastic bag, combine the flour,salt and pepper. Add chicken, a few pieces at a time, and shake to coat. In a skillet, brown chicken in butter until juices run clear. In a saucepan, combine the oranges, marmalade and tarragon; bring to a boil. Pour over chicken; stir gently to coat. Serve warm with toothpicks.

I was making the grape jelly meatballs tonight, to freeze for later, they are always delicious. But as I was doing so, I looked up Betty Crocker's web site and I looked at their appetizers. They have some cute easy recipes. Like, for example, they have a xmas tree shaped cheeseball and a snowman shaped cheeseball. They also have some really delicious looking recipes. People on the site have tried, at least some of them, and rated them on ease and taste. There is also a recipe called gone in 60 seconds that is very good. The "Red Hot Lover" jam is what makes it so good. I can usually find it at gourmet shops or specialty shops, and don't have to order it online. It has pecans, cream cheese, cheddar cheese, green onions and the jam.

Get a styrofoam cone from a crafts store, and buy colorful toothpicks. Spear cherry tomatoes, cheese cubes, black and green olives, folded up or cubed salami, and cocktail onions with the toothpicks and stick them into the cone. Make sure you don't leave space between the the items when you stick them on there, you don't really want to see the white cone. When you're done, you'll have a pretty, edible appetizer that will look a Christmas Tree!!

Another one of my favorite ideas is wraps, but use Tomato Basil and Spinach tortillas instead of plain; spread them with herbed cream cheese and add meats and/or veggies, then slice them and arrange on a plate.

Take a beefsteak tomato and slice it, then add a slice of fresh mozzarella on top. Sprinkle with basil and season with salt and pepper, then drizzle a good olive oil over the top. You can also do this with cherry tomatoes, mozzarella cubes, and folded basil, on a toothpick. Those look festive too.

Take an english muffin, and toast. Rub with fresh garlic, then add a cheese of choice (I like cambazola for this) and diced up sundried tomatoes. Bake until cheese melts; garnish with basil. Cut crosswise and serve.

Sausage Roll Ups

1 lb. Seasoned Sausage
8 oz. Cream Cheese, softened
2 pkg. Crescent Rolls
Poppy Seeds
1 Egg White

Brown sausage and drain. Add cream cheese to sausage, stirring until it melts. Separate crescent rolls (2 rectangles in each package) 4 total. Lay out flat and smooth perforations. Lay sausage log down the middle, fold over and press together. Turn over so seam is on bottom. Brush with egg white over top. Sprinkle with poppy seeds. Bake 20 minutes at 350 degrees.

Asian Chive Bites


Ingredients
1 pkt. Asian Chive Dip Mix
8 oz. softened cream cheese
8 oz. tube refrigerated crescent rolls

Directions
Combine first 2 ingredients; blend well. Unroll crescent roll dough; separate into triangles and cut each triangle in half. Drop a small spoonful of cream cheese mixture onto center of each triangle; fold in half and pinch seams. Bake as directed on crescent roll packaging or until golden brown. Makes 16 bites.

Hot and Spicy Fiesta Chicken Dip

Ingredients
2 Tbsp. Fiesta Party Dip Mix™ or to taste
2 (13 oz.) cans chicken breast meat
8 oz. softened cream cheese
8 oz. sour cream
8 oz. jar drained, rinsed jalapeno peppers or to taste

Directions
Combine all ingredients; mix well. Microwave about 3 minutes; stir. Serve with tortilla chips.

My goodness, after seeing all these recipes, this is a somewhat daunting task!!!! Here are some ideas though:

1. Brie En Croute: 1 large wheel of double cream brie, topped with thick caramel ice cream topping, chopped pecans, enfolded in a rich puff pastry. Secure at top with bakers twine and cut top into decorative leaves. Brush with egg wash and bake until puffed and golden. Serve with artisan crackers.
2. Puff pastry wheels: On a rectangular section of puff pastry spread black or green olive tapenade and goat cheese. Roll tightly and cut into 1/2 inch slices. Bake until golden and puffed.
3. Fresh fruit kabobs with yogurt-marhsmallow fluff dipping sauce.
4. Pepper salami, sliced thin, spread with goat cheese and wrapped around a cornichon. Secure with toothpicks.
5. Hot artichoke and crab dip with blue corn tortilla chips: 2 cans artichoke hearts, drained and chopped; 1 cup flaked crab meat; 1 cup mayonaise; 1 T hot sauce; 1 T lemon juice; 1 can diced green chili's; 2 cups shredded good parmesan cheese. Mix and place in baking dish. Bake until bubbling and golden. Serve with tortilla chips.

I love liver pate' served with small slices of bread or crackers. An antipasto tray is always a big hit, too...make sure to serve some crusty bread next to it. Also, roast some asparagus in the oven with a touch of olive oil, at 450 for about 8-10 minutes. Take out and let cool and then wrap with thin prosciutto slices - that's one of my favorites!

BLUE CHEESE BITES

1 pkg. refrigerated biscuits
1/4 c. butter
3 tbsp. crumbled blue cheese

Quarter biscuits; arrange in 2 (8 inch) round baking dishes. Melt butter and cheese. Drizzle over biscuits. Bake at 400 degrees for 12 minutes.

SWEDISH PICKLED SHRIMP

MARINADE:

1 1/2 c. salad oil
3/4 c. white vinegar
3 tbsp. capers and juice
1 tsp. celery seed
1 1/2 tsp. salt
Few drops Tabasco sauce

Combine; mix well and set aside.

2 to 2 2/1 2lbs. frozen shrimp
1/4 c. mixed pickling spices
1 tbsp. salt
2 c. sliced onions (optional)
7-8 bay leaves

Cover shrimp with boiling water. Add pickling spices and salt. Cover and simmer 5 minutes. Drain and cool with cold water. Alternate shrimp, onion and bay leaves in shallow dish. Pour marinade over shrimp. Cover; CHILL at least 24 hours before serving.

GRAPE JELLY MEATBALLS -makes 5 doz.

1# grd.meat
1/2 C.dry bread crumbs
1/3 C. minced onion
1/2 C.milk
1 egg beaten
1 TB mince parsely
1 tsp.salt - 1/8 tsp. pepper
1/2 tsp. whorseshire sauce

hand mix well, shape into 1 in.balls, and lay on a cookie sheet - put in oven - 400 degrees -for 8 mins. - flip balls 1/2 way thru.

(can buy store boughten meat balls, we like to make our own)

Heat:
1 btl. (12oz) chilli sauce
1 jar (10oz) grape jelly
stirring til jelly is melted

add the meatballs and simmer uncovered for 30 mins.

They go like hotcakes at our house....

Take about 2/3 cream cheese to about 1/3 crumbled blue cheese and "smoosh" it all together til its combined...

Then take some grapes and coat them with the mixture, roll in finely chopped nuts and its the best stuff you ever ate...

plus if there are little ones around they can help too.
