We love chicken, steak, beef, pasta... just about anything.

I just get so sick of making the same ole dishes. So, lets exclude spaghetti, tacos, lasgana, BBQ chicken breast.

We ate out all weekend, so I need to make a yummy dinner... and a dessert as well!

Not your average meatloaf


1 1/2 pounds ground beef
1 egg
1 cup sour cream
2 tablespoons Worcestershire sauce
1 (1 ounce) package dry onion soup mix
1/2 cup grated Parmesan cheese
1 1/2 cups Italian-style dried bread crumbs

Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine the beef, egg, sour cream and Worcestershire sauce. Mix in soup mix, cheese, and bread crumbs. Form mixture into a loaf, and place in a 9x5 inch loaf pan. Cover with foil.
Bake at 375 degrees F (190 degrees C) for 45 minutes. Remove foil and continue baking for another 10 to 15 minutes. Let stand 5 to 10 minutes before serving for easier slicing.

I've got 2 small roast waiting to prepare when I get home. I'm going to rub seasonings on them, put some olive oil into a hot skillet and sear the roasts on all sides, then into the oven roasting at 325 for about 1 to 1 1/2 hours as they are small. I peel and add some potatoes to the pan the last 1/2 hour, make some gravy and some corn and biscuits and we're good to go.
No room for dessert with that. However I started baking Christmas cookies yesterday so anyone with a sweet tooth can get in the freezer and grab one or two :)

Left over beef will be shredded and mixed with BBQ sauce tommorow.

Quick and easy, and surprisingly yummy.

Brown some onion, mushrooms and garlic in a Dutch oven. When they're ready, add one big can of beef or vegetable broth. Then cook a bag of tortellini in the broth. I threw in about a cup of frozen peas too. It takes about 7 or 8 minutes for the torts to get done, so don't over do it or they get mushy. I also threw some garlic pepper in it, and we put parmigiana cheese on it.

This is called Tortellini en brodo. I used to have it in NYC all the time, but I'd forgotten about it until about a week ago. I made it last week, and could have made twice as much. I also microwaved a few baby carrots -- the torts don't take long enough for carrots to cook. This made 4 nice soup bowl servings.

I just made this soup yesterday and it is one of my favorite dishes.

Ingredients
5 celery ribs
4 medium carrots, peeled
1 large yellow onion
2 medium potatoes, peeled
1 large green bell pepper
1 (14 ounce) can imported Italian plum tomatoes
1 (5 lb) hen, washed and cut into 8 pieces
1/2 cup chopped fresh Italian parsley
2 garlic cloves, finely chopped
6 quarts water
2 14.8 oz cans chicken broth
4 chicken bullion cubes
1 bay leaf
1/2 tsp thyme
2 packets Sozan Goya
salt & freshly ground black pepper
4 or 5 large mushrooms
Small to Medium size Egg noodles or rice
Parmesian Cheese


Dice celery, carrots, onion, potatoes and bell pepper into 1/4-inch pieces. Chop tomatoes; reserve all juice. Hold off on the mushrooms for now.
Place vegetables, tomatoes with their juice, chicken pieces, parsley and garlic in a 10-quart stockpot. Add water and chicken broth and seasonings. Also season with salt and pepper. If you like spicy, you can add a teaspoon of redpepper flakes.
Slowly bring soup to a boil over low heat. Skim off foam that rises to the surface; may have to skim 2 or 3 times. Partially cover pot and simmer 2 hours.
When chicken is finished, remove chicken pieces with a slotted spoon. Let cool.
Meanwhile, mash vegetables in the bottom of the pot with the back side of a large cooking spoon or a potato masher. Thinly slice mushrooms and add to the pot.
When chicken has cooled enough to handle, remove skin and bones and return meat to soup. Bring soup back to a simmer.

Fill a pot with cold water, bring to boil and cook up enough egg noodles to add to individual bowls before serving. This keeps from overcooking noodles and fresh noodles should be added directly to the bowl when serving. You can substitute white or brown rice for noodles if you wish.

Adjust salt and pepper to taste.

Sprinkle freshly grated parmesian cheese over the top of the soup just before serving.

make some fettucine alfredo, put in a baking pan and some chicken breast on top with shredded mozzarella cheese and a spoonful of your favorite marinara sauce bake and delish!

we make fried chicken with a twist. we mix parmesan cheese (the powdered kind) and italian bread crumbs with a little bit of flour, for the breading, and cook the regular way.

also, spinach-cheese penne.
