Depends
If you are flaming something then you need an alcohol of at least 30 percent alcohol (60 proof). If you have other alcohol but not brandy or cognac I would try a vodka, grand marnier, calvados. If flaming is not an issue then just omit or add some white wine or vermouth

Flavoring liquids, like Vanilla extract (in the Spice section of the grocery store), sometimes come in 'brandy' or 'cognac' flavor. If it is the alcohol you are worried about, those won't do because they have just as much alcohol as the real thing. The alcohol will bake, or cook out, though (as it would for the real thing).

Any spirit with the same alcohol volume should do, but you'll have to pay attention to taste, not everything will do.
