Here is an idea -
Salad of braised endive with goat cheese toasts
6 endive
dressing of parsley, garlic, lemon and olive oil
sliced mushrooms (not in original recipe)
sliced bread
spreadable goat cheese and herbes de provence
(well, actually I used chive flavored cream cheese when I made this recipe as I do not like goat cheese, but the original recipe called for goat cheese, and hey, you may like it!)
Slice endive in half and "marinate" along with mushrooms in dressing. Broil for about 7-10 minutes turning often. Should start turning brown on the edges. Meanwhile, cut bread into triangles and lightly toast. Then spread with cheese and herbs and put under broiler until melty. Arrange endive halves on half a plate like a fan and sprinkle with mushrooms. Arrange cheese toasts on the other half of the plate as the rest of the fan. I also served it with canteloupe for dessert. Bon appetit!

Get shrimp and scallops. When you're searing them, make sure they're heavily coated in chili powder. Take them out, set aside, and finish making the alfredo sauce with the leftover chili powder and butter in the pan. Toss the seafood in to heat it back up, and serve over linguini or fettucine. Top with real shredded Parmesan, asiago, and Romano, and some fresh chopped cilantro or parsley. A green salad and garlic cheese bread is good to go with it.

I do not eat meat, either. Here is one of my favorite in-a-hurry meatless meals --
At the store, buy a package of chili seasoning mix. Buy three cans of beans - I like to buy three different cans, e.g.: red kidney beans, black beans, white beans. Buy some canned tomatoes and in the frozen food section buy some soy crumbles. Boca and Morningstar farms are two brand names. This is a soy product to replace ground beef. Boca packages it in 3 individually wrapped servings and I use one of them.
Just dump everything in a pot and heat. The amount of tomatoes depends on the consistency you like. If you have a good spice cabinet, you can make your own seasonings based on what you like or following any standard recipe for chili.
If you eat cheese and dairy, I like to serve it with sour cream. Or put some grated cheddar on top and stir it into the hot chili. Enjoy!

SHRIMP SCAMPI
1-1/2 pounds fresh or frozen large shrimp
1/4 cup butter, melted
1/4 cup olive oil
6 cloves garlic, minced
2 tablespoons snipped fresh parsley
1 teaspoon finely shredded lemon peel
1/4 teaspoon salt
1/4 teaspoon black pepper
Hot cooked fettuccini (optional)
Lemon wedges (optional)
Thaw shrimp, if frozen. Peel and de-vein shrimp, leaving tails intact. Rinse shrimp; pat dry with paper towels. Set aside. In a 13x9x2-inch baking pan combine butter, oil, and garlic. Broil 4 to 5 inches from the heat for 2 minutes. Add shrimp, parsley, lemon peel, salt, and pepper to baking pan. Toss ingredients to coat shrimp. Broil for 2 minutes. Turn shrimp over and broil for 1 minute more or until shrimp turn opaque. If desired, serve shrimp and butter-garlic mixture over hot cooked pasta. Serve with lemon wedges. Makes 4 servings.

If you're wanting something totally different, the I would make tostadas. You can make them with ground beef, however we always have them with refried beans instead.
You fry a corn tortilla flat, place the refried beans on top, then you put your normal taco toppings on top of that (ie, lettace, tomatoes, cheese...) It's very very good.

Keep it simple! how about some shrimp and scallops on skewers marinated in lemon pepper seasoning with some fettucine alfredo and steamed broccolli. good luck!
