You can make any mexican dish but instead of beef, use the chorizo. Tacos, burritos, enchiladas, quesadillas. I know what you mean though. My hubby makes it almost every morning with his eggs and wraps it in a tortilla.
You can even melt some velvetta and mix the cooked chorizo in that with some onions and some tomatoes, and eat it over some chips for nachos. That's really good.

Chorizo with potatoes. Peal the potatoes then cut them in small square shape then fried them a little. Then is a separate pan fried the chorizo at the end mix everything together. Try it u might like it.

I had it in quesadillas one night with chopped red bell peppers. The sweet red peppers kind of toned down the acidity of the chorizo. Red bell pepper was VERY tasty with it...much better than I expected.
Just dice the chorizo nice and small, and brown it in a pan to render some of the grease out of it before you put it on your quesadilla. I didn't bother to cook the peppers first because I happen to like the fresh taste of red peppers since they are so sweet. Fresh cilantro goes nicely too. It was a nice twist on a quesadilla instead of chicken or shrimp.

boil some potatoes (i like the small red or russet), then fry it with the chorizo and do what you like with it. i like to make tacos dorados - either roll up the potato/chorizo mixture in a tortilla or just fold it over and fry it. top with shredded lettuce or cabbage, mexican cream, cheese and salsa. YUMMMYYY
also - it tastes GREAT in spaghetti sauce instead of ground beef. you can either cook it in the sauce, or fry it separately and just top your spaghetti dish with it and then the parmesan.

u can cook choriqueso that is chorizo with melting cheese (manchego) u can eat it alone or in a taco
theres also a dish that i like and its beef (bistek, a thin slide of beef) + onion + cactus (nopal) + chorizo, all in cubes juss cook it all in a pan

Base meat for chili con carne. Use it like sausage in any meat dish. It would go good with mexican rice and beans for tacos or enchiladas or buritos. Use it for a meaty nacho dish. Add it to your favorite cheese sauce for chips. Use it for a mexi-spaghetti or lasagna. Use your imagination and have fun!
