I believe in His philosophy, I just find the physics defying part a bit hard to swallow. I wonder what documentary evidence there is for this.

Nobody can make you believe something. The documentation is from the witnesses that saw it. That is in the Bible.

Yes - physics are defied. People don't normally come back from being dead after 3 days either. Looks like God can do miracles.

Are we even sure this in fact defied physics? ...after all, no one completely understands how gravity works not even the most knowledgeable scientists. Perhaps what Jesus did, was in harmony with the laws of physics.

That said, if you have a problem with Jesus walking on water, I imagine you would have a problem with God creating the entire universe by speaking it into existence. But I believe with God all things are possible!

well if God can create the universe that works without the input of mankind daily ; and God provides everything that we need , atmosphere, gravity, food , water, nature's pharmacy ; why would you like a thing like walking on water is difficult when you can rise from the dead??

You can't see love but you know it is there; you don't know why or how it got there , you see actions of love by a hug, a gesture; the same with God , you see him in everything ;

You can't tempt God to say show me or else; he left more than enough evidence in everything; look at your own body , you don't have to worry to make your heart beat or your lungs breath; you just have to worry about living; you didn't do ; you were done ; there is nothing that God can't do .

There is plenty of documentary evidence supporting this. Three accounts of eyewitness testimony have been recorded. Matthew's Gospel, Mark's Gospel, and John's Gospel.

According to one of the founders of the Harvard Law School, these accounts would stand up in a court of law.

According to your presuppositions no evidence would be adequate because you raise yourself or man as the ultimate authority of what is possible. The reason the Christian believes it is that he starts with God as the ultimate authority. God is the determiner of possibilities not man. So as long as you use yourself as the ultimate authority or your experience no amount of "evidence" will be satisfactory to you. The Bible teaches what is needed first is a radical change in ultimate commitments. What we classify as legitimate evidence is contingent upon our ultimate presuppositions about reality.

Just eye witness accounts and a lack of finding a submersed Jesus. If he truy was God why is it so difficult to imagine that he was not subject to the physicl laws he created.

Jesus was the son of God, and with God all things are possible. No physical laws can explain this and thats what makes it only possible due to the power of God.
Jesus came to give a witness to his Fathers qualities, such as his power, as well as everything else

None. However there is some indication that ice spars form occasionally there, and he could have walked on one of those - this seems a stretch to me.

Why do you believe an eyewitness of today, but deny them of yesterday?

If it didn't defy the laws of physics, it wouldn't be a miracle, now would it?
