Premium: better than cheap ("well") liquor.
Open Bar: Free drinks for the guests.
Premium bottles: probably *not* cheap champagne.

Premium doesn't mean "Top Shelf", so don't expect Dom Perignon, Roederer Crystal, or Johnny Walker Blue Label. Then again, if that's what's being served, that would be very cool!

Premium means expensive. So they'll be serving Grey Goose vodka instead of a bottle of cheap Hawkeye vodka. In other words, they're serving the good stuff.

Hello,
It started as a sales gimmick to make people think they are getting a better quality of whatever, it usually also costs more.
Any sales person who puts premium on whatever they are selling will sale more of whatever, and get top dollar.

Just buy what the majority of your guests like.

typically, open bars are filled with "well" liquor, cheap rotgut that technically is scotch, or gin, or vodka, etc, but is the cheapest stuff on the market.

Premium, or call, liquor is just that. if you call out: Tanquerey and Tonic, you want Tanquerey gin, but if you call gin and tonic, you get crap gin. Premium just relates to the fact that the liquor is better quality/well known brand

Premium bar refers to the fact that they will have high end alcohol (e.g. Belvedere Vodka, Patron Tequila) as opposed to the cheap stuff you can find for $6.99 at your local grocery store.
