I'm looking for a simple, easy to make (ala Rice a Roni) rice dish to serve on Christmas. I would like to use wild rice in it as well. We are serving grilled salmon, the rice dish, brocolli casserole and salad. Any good recipes out there?

California-Style Wild Rice Pilaf (6 servings) Double for more.
1 cup uncooked brown and wild rice mix or other wild rice blend.
1 package (9ounces) Dole California style vegetables
1 teaspoon dried basil leaves, crushed.
(cut cauliflower into smaller pieces-if desired)
Cook rice to package directions,,,,stirring in veggies seasoning packet and basil the "last 3 minutes" of cooking time.
Drain excess liquid from veggie-rice mixture. Spoon into serving dish. Garnish with fresh herbs.
** Using an Ice Cream scooper to scoop the rice onto the plates gives a nice visual presentation.

Easy Rice Dressing

1 and 1/2 pounds groung beef (or beef and ground pok mixture)
1 bell pepper
1 medium yellow onion
3 stalks celery
2 cans campbell's Beef Consume'
1 can Campbell's Cream of Mushroom soup

1. Brown 1 and 1/2 pounds ground beef and drain set aside.
2. In the same pot saute' 1 bell pepper, 1 onion, and 3 stalks of celery until the onions are translucent.
3.Add the browned groung beef
4.Add 2 cans Campbell's Beef Consume' and 1 can cream of mushroom soup. Stir till well blended.
5. Add 2 cans long grain rice,stir till well blended. Bring to a boil. Then lower temp to a slow simmer.(Use 1 of the empty Campbell's cans for mesuring the rice)
6.Cover and simmer as low as your stove will go, do not remove cover for 2 hours.
Stirring during the simmering process will cause your rice to become a mushy paste. If you can't trust yourself to not peek, set your oven to 225 F and put the pot into the oven for 2 hours.

Christmas Rice Pilaf

1/2 cup finely chopped onion
3 celery ribs, finely chopped
1/2 medium red bell pepper, chopped
1/2 medium green bell pepper, chopped
2 tablespoons butter
4 cups chicken broth
1 teaspoon salt
Freshly ground black pepper to taste
2 cups long-grain rice
1 cup wild rice cooked (can be done ahead)

In a large saucepan, saute onion, celery and pepper in butter over medium heat for 2 minutes, or until crisp-tender.
Add the chicken broth, salt and pepper; bring to a boil.
Add rice, cover and reduce heat to low. Simmer for 20 minutes.
Remove from heat add cooked wild rice; gently fluff with fork and serve.

This is made with white rice but is still really good. I don't have exact measurements primarily because I guess it depends on how you like your proportions.

I use about 2 cups of cooked white rice.
1 package of frozen chopped spinach.
some onion, salt and pepper.
Velveta cheese.
Little bit of butter and milk.
(if you make a larger batch, you can also use canned cheese along with the velveta.)

This can be done on the stove, the oven, or crockpot. Just mix together after the rice, spinach, and onion are cooked.

Make your wild rice then add, after the rice is done, some peas, red onion chopped up and some chopped green bell pepper. Mix all together and serve warm.

I don't know of a rice dish that would have any common with your dish you need but lets not give up yet. Stop your planning and plan on cancelling out the rice dish your wanting and order a very large dish of Japanesse food from the" KANKI."

Confetti Rice--use 4 boil-in bags of rice, prepared. Finely dice 1/2 of each: red bell pepper, yellow bell pepper, green bell pepper, and one medium onion. Sautee vegetables in butter until opaque. Mix sauteed veggies with prepared rice, top with extra butter---deelish!

Cook the rice with garden peas & plenty of herbs in Chicken stock not water. It will be a bit stodgy but the taste is wonderful. It is almost creamy. Salt & ground black pepper to taste.
